- 2 Korean green chili peppers (Cheongyang peppers)
- 2 Eggs
- 2 Tbsp Frying powder
- 3 Scallions
- Pinch of salt
- Pinch of ground black pepper

Hello everyone! Today, we’re going to make chewy and delicious Enoki Mushroom Pancakes. This recipe is simple yet incredibly flavorful, so follow along carefully to the end.

First, wash the enoki mushrooms thoroughly under running water. Trim off the bottom root part, and then cut the mushrooms into three equal portions. Place the prepared enoki mushrooms into a glass bowl. Finely chop 2 Korean green chili peppers to add a touch of spiciness.

Crack 2 fresh eggs into the bowl and whisk them well. Add 3 scallions, washed and finely chopped, for a fresh aroma. You can also add finely diced carrots or onions for extra flavor if you like.

Now, let’s make the batter by adding about 2 tablespoons of frying powder. If you don’t have frying powder, you can use pancake mix.
