  • 3 Tbsp Soy Sauce
  • 2 Tbsp Mirin (or cooking wine)
  • 2 Tbsp Plum Extract (Maesilcheong)
  • 2 Tbsp Sesame Oil
  • 1 Tbsp Minced Garlic
  • Pinch of Black Pepper
  • 1/2 Red Onion, thinly sliced
  • 1 pack King Oyster Mushrooms (Enoki mushrooms), base trimmed and separated
  • 1/2 pack Oyster Mushrooms, base trimmed and torn into pieces
  • 3 Shiitake Mushrooms, stems removed and thinly sliced
  • 1 bag Bunji Mushrooms (Man-a-dak Mushrooms), base trimmed
  • 2 Red Chilies, diagonally sliced
  • 2 Heads of Bok Choy, base trimmed and leaves separated
  • 1 handful Bean Sprouts, rinsed thoroughly
  • 2 Tbsp Fish Sauce (or Korean soup soy sauce)

Clear Broth Ingredients

  • 1L Water
  • 1/2 Onion, cut into large pieces
  • 50g Radish, cut into large pieces
  • 2 Green Chilies, diagonally sliced
  • 2 Red Chilies, diagonally sliced
  • 1/4 Green Bell Pepper, cut into large pieces (optional)
  • 1 handful Dried Anchovies (intestines removed)
  • 4 pieces Dried Kelp (Kombu, 10x10cm)

Cooking Instructions

First, let’s prepare the clear broth. In a pot, combine 1L of water with the large-cut radish, onion, green chilies, red chilies, and green bell pepper (if using). Bring to a boil over high heat, then reduce to medium-low and simmer for about 10 minutes to allow the flavors to meld.
