With the holidays approaching, you’ll likely have plenty of side dishes. But what if you crave something more substantial? This spicy pork stir-fry, seasoned with gochujang and perilla seeds, is the perfect solution! It’s not only delicious on its own but also makes a fantastic base for bibimbap, allowing you to enjoy a hearty meal quickly. Prepare this versatile sauce in advance to easily elevate other dishes like braised chicken (dakdoritang), braised tofu, or even transform leftover jeon (pancakes) into a flavorful jjigae (stew). Enjoy this crowd-pleasing dish!
Main Ingredients- 600g ground pork
- 500g gochujang (Korean red chili paste)
- 300g spicy gochujang (optional, adjust to taste)
- 3-4 Tbsp ground perilla seeds
Pork Marinade- 4-5 Tbsp soy sauce
- 1-2 Tbsp minced garlic
- 2 Tbsp cooking wine (like mirin or sake)
- 2 Tbsp sugar
- A pinch of black pepper
Finishing Seasoning (Optional)- 1-2 Tbsp corn syrup or honey
- 1 Tbsp sesame oil
- A sprinkle of sesame seeds
- 4-5 Tbsp soy sauce
- 1-2 Tbsp minced garlic
- 2 Tbsp cooking wine (like mirin or sake)
- 2 Tbsp sugar
- A pinch of black pepper
Finishing Seasoning (Optional)- 1-2 Tbsp corn syrup or honey
- 1 Tbsp sesame oil
- A sprinkle of sesame seeds
Cooking Instructions
Step 1
Start by preparing 600g of ground pork in a bowl. Transfer the pork to a stir-fry pan. Add the pork marinade ingredients: 4-5 Tbsp soy sauce, 1-2 Tbsp minced garlic, 2 Tbsp cooking wine, 2 Tbsp sugar, and a pinch of black pepper. Mix everything thoroughly to coat the pork.
Step 2
Cover the marinated pork with plastic wrap and let it rest in the refrigerator for 20-30 minutes. This marinating time allows the flavors to penetrate the meat, making it more delicious.
Step 3
You can mix two types of gochujang for a deeper flavor profile, or use your preferred gochujang. If using store-bought gochujang, be mindful of its sweetness and adjust the amount of corn syrup or honey in the final step accordingly.
Step 4
Place the marinated pork into the stir-fry pan over medium heat. Cook until all the moisture has evaporated and the pork is nicely browned and slightly crisp. You can drain excess fat for a cleaner taste.
Step 5
Once the pork is nearly cooked, add the gochujang (500g regular, 300g spicy, or your preferred mix). Reduce the heat to medium-low and stir continuously with a spatula to ensure the gochujang coats the pork evenly and doesn’t burn.
Step 6
After the sauce has coated the pork well, add 3-4 Tbsp of ground perilla seeds and mix again until well combined. For extra flavor and sweetness, you can add 1-2 Tbsp of corn syrup or honey and 1 Tbsp of sesame oil at this stage, adjusting to your taste.
Step 7
Continue to stir-fry for about 5 more minutes. Just before turning off the heat, sprinkle with sesame seeds for an added nutty aroma. This completes the dish! Let it cool and store in an airtight container in the refrigerator. It can be kept for about two weeks.
