Main Ingredients- 400g chicken thigh meat
- Milk (for removing gamey smell)
- Green onion (optional)
- Potatoes (cut into large chunks)
- Cabbage (cut into large chunks)
- Dumplings (to taste)
- Sausages (to taste)
- Glass noodles (soaked in advance)
Braising Sauce- 3 Tbsp soy sauce
- 2 Tbsp sugar
- 2 Tbsp gochugaru (Korean chili flakes)
- 1 Tbsp oyster sauce (or fish sauce)
- 4 Tbsp oligo-dang (corn syrup)
- 1 Tbsp ketchup
- 1 Tbsp minced garlic
- 1 Tbsp gochujang (Korean chili paste)
- 3 Tbsp soy sauce
- 2 Tbsp sugar
- 2 Tbsp gochugaru (Korean chili flakes)
- 1 Tbsp oyster sauce (or fish sauce)
- 4 Tbsp oligo-dang (corn syrup)
- 1 Tbsp ketchup
- 1 Tbsp minced garlic
- 1 Tbsp gochujang (Korean chili paste)
Cooking Instructions
Step 1
First, it’s crucial to thoroughly remove any gamey odor from the chicken. Soak the chicken thigh meat in milk for about 10 minutes. The milk not only tenderizes the chicken but also helps neutralize odors.
Step 2
After soaking, rinse the chicken thoroughly under running water to remove the milk. Pat the chicken dry with paper towels. Ensuring the chicken is dry prevents excessive oil splatter when you start cooking.
Step 3
Lightly oil a heated pan and add the dried chicken thigh meat. Stir-fry over medium heat until the surface of the chicken turns white. Cooking the exterior first helps the sauce penetrate better later.
Step 4
While the chicken is cooking, let’s prepare the delicious sauce! In a bowl, combine 3 Tbsp soy sauce, 2 Tbsp sugar, 2 Tbsp gochugaru, 1 Tbsp oyster sauce (or fish sauce), 4 Tbsp oligo-dang, 1 Tbsp ketchup, 1 Tbsp minced garlic, and 1 Tbsp gochujang. Mix well to create a perfectly balanced sweet, savory, and spicy sauce!
Step 5
Now, once the chicken is partially cooked, add your chosen toppings and vegetables to the pan. I’ve added large chunks of potato and cabbage, along with dumplings and sausages. Feel free to add any ingredients you love!
Step 6
Pour the prepared braising sauce evenly over the ingredients in the pan. Stir everything together and let it cook for a minute before adding the pre-soaked glass noodles. Continue to simmer for another 2-3 minutes, allowing the noodles and other ingredients to absorb the flavorful sauce. Your delicious Gochujang Jjimdak is now ready!
