Main Ingredients

  • 200-300g Kimchi (aged kimchi recommended)
  • 1.5 Tbsp Gochugaru (Korean chili flakes)
  • 1 tsp Brown Sugar
  • 1 Tbsp Minced Garlic
  • 5 Shiitake Mushrooms (fresh or rehydrated dried ones)
  • White Rice
  • Brown Rice (mix white and brown rice to your preference)
  • 200g Bulgogi-cut Pork (for stir-fry)
  • 1 Tbsp Soju (or cooking wine, for deodorizing pork)
  • 0.5 Tbsp Coarse Sea Salt
  • 1 tsp Black Pepper
  • Water (for cooking rice, fill to palm height)

Bibimbap Sauce

  • 10 stalks Chives (finely chopped)
  • 1 Tbsp Minced Garlic
  • 1 Tbsp Gochugaru (Korean chili flakes)
  • 3 Tbsp Guk-ganjang (Korean soup soy sauce)
  • 1 Tbsp Plum Extract (Maesilcheong)
  • 1 Tbsp Toasted Sesame Seeds
  • 1 tsp Brown Sugar
  • 1 Tbsp Sesame Oil
  • A little Lukewarm Water (for adjusting consistency)

Cooking Instructions

Step 1

Slice the shiitake mushrooms into eyebrow-like shapes, or into bite-sized pieces. Rinse the mixed grains (white and brown rice) 3-4 times and soak them in water for about 10-15 minutes. This will help the rice cook evenly and become fluffy.

Chop the kimchi into bite-sized pieces. In a bowl, combine the kimchi with the seasoning ingredients: 1.5 Tbsp gochugaru, 1 tsp brown sugar, and 1 Tbsp minced garlic. Gently mix and let it marinate for 10 minutes. This enhances the kimchi’s flavor and color.

Place the thinly sliced pork in a bowl. Add the deodorizing ingredients: 1 Tbsp soju (or cooking wine), 0.5 Tbsp coarse sea salt, and 1 tsp black pepper. Mix well and let it marinate for 10 minutes to tenderize the meat and remove any unwanted odors.

Add the soaked mixed grains to your rice cooker. Measure the water. A good guideline is to fill the water to the height of your palm when you place your hand flat on top of the rice. Be careful not to add too much water, as it can make the rice mushy.

Spread the marinated kimchi evenly over the rice in the rice cooker. Gently press it down with the back of a spoon to ensure it melds well with the rice.

Stir everything together. Finally, add a little lukewarm water to reach your desired sauce consistency; it should be thick but pourable, not watery.
