Seasoning & Broth

  • 4 Tbsp Mirin (or cooking wine)
  • 1 Tbsp Sugar
  • 2 Tbsp Gochugaru (Korean chili powder, adjust to taste)
  • 2 pinches Black Pepper
  • Broth (Anchovy-Kelp broth or store-bought broth) – ample amount
  • 2 Tbsp Soy Sauce

Cooking Instructions

In a pot, add 1 cup (approx. 200ml) of water along with the radish and onion, both cut into bite-sized cubes. Bring this mixture to a boil to extract the refreshing vegetable flavors into the broth. Once boiling, add the finely chopped chili peppers and green onion for an aromatic touch. Now, prepare the seasoning: mix in 4 Tbsp mirin, 1 Tbsp sugar, 2 Tbsp gochugaru, 2 pinches of black pepper, and 2 Tbsp soy sauce. (If you have homemade anchovy-kelp broth, using it instead of plain water will significantly enhance the depth of flavor. Store-bought broth is also a convenient option.)

Add the prepared odeng to the boiling broth and simmer for another 2-3 minutes, allowing the fish cakes to absorb the flavors of the seasoning.
