For the Fried Dumplings- 16 frozen dumplings
- 2/3 cup cooking oil (approx. 120ml)
- 1 + 1/2 cups water (approx. 270ml)
For the Salty-Sweet Soy Dipping Sauce- 1 Tbsp Mirin (or sake) (15ml)
- 2 Tbsp sugar (30g)
- 3 Tbsp soy sauce (45ml)
- 4 Tbsp vinegar (60ml)
- 1 Tbsp finely minced onion (15g)
- 1 chopped green chili pepper (adjust to taste)
- 1 chopped red chili pepper (for color)
- 1 Tbsp chopped green onion (15g)
- 1/2 Tbsp minced garlic (7.5g)
- 1 Tbsp sesame oil (15ml)
For the Creamy Mayonnaise Sauce- 10 Tbsp mayonnaise (150g)
- 3 Tbsp finely minced onion (45g)
- 6 Tbsp sugar (90g)
- 1/2 Tbsp curry powder (7.5g)
- 1 Tbsp wasabi paste (adjust to taste)
- 1/2 Tbsp chili powder (7.5g)

Cooking Instructions
Step 1
Prepare the aromatics for the dipping sauces. Finely mince the onion. Chop the green onion. Remove the seeds from the chili peppers and mince them finely. If you enjoy a bit of heat, feel free to increase the amount of green chili.

Let’s make two delicious dipping sauces! First, the ‘Salty-Sweet Soy Sauce’. In a bowl, combine mirin (or sake), sugar, soy sauce, vinegar, minced onion, minced green chili, minced red chili, chopped green onion, minced garlic, and sesame oil. Stir well until the sugar is dissolved. Let this sauce sit for a few minutes to allow the flavors to meld beautifully.

Next up, the ‘Creamy Mayonnaise Sauce’. In a separate bowl, mix together mayonnaise, finely minced onion, sugar, curry powder, wasabi paste, and chili powder. Stir until everything is evenly combined. Adjust the amount of wasabi to your preference for a perfect kick. This sauce adds a wonderful richness!

Now, let’s get to frying the dumplings. Choose a pan or wok with some depth. Add 2/3 cup of cooking oil and 1 + 1/2 cups of water to the pan. Cooking the dumplings with both oil and water creates a wonderfully tender and juicy interior while achieving a crispy exterior. Arrange the frozen dumplings in the pan. Cover with a lid and cook over medium heat for about 10 to 15 minutes. This method allows the dumplings to steam and then fry as the water evaporates. Stir the dumplings halfway through cooking to ensure they brown evenly. They will become a beautiful golden brown as they fry in the oil.
