Refreshing Chogye Guksu with Chicken Tenderloin
Easy and Delicious Chogye Guksu Using Chicken Tenderloin and Cold Noodle Broth!
As the weather gets warmer, I can feel summer approaching. On days like this, I crave a cool and refreshing broth, so I made Chogye Guksu using chicken, which is great for boosting immunity.
Main Ingredients- 4 pieces chicken tenderloin (approx. 200g)
- 1 packet ready-made Naengmyeon (cold noodle) broth (500ml)
- 1/2 onion
- 1/2 stalk green onion
- 6 cloves garlic
- 200g somyeon noodles (or dried noodles)
- Pinch of black pepper
- Pinch of salt
- 1 handful cabbage
- 5 pieces pickled radish wraps (ssammu)
Cooking Instructions
Step 1
First, let’s boil the chicken tenderloin. In a pot, bring about 400ml of water to a boil. Add the 4 pieces of thawed chicken tenderloin, half a stalk of green onion (cleaned), 6 cloves of garlic, and half an onion (peeled). Cover and simmer for about 20 minutes until the chicken is tender and cooked through. Tender chicken is easier to shred.
Step 2
Once the chicken tenderloin is well-cooked, remove it from the pot and let it cool slightly. Using your hands, shred the chicken along the grain into bite-sized pieces. Avoid shredding them too finely; slightly thicker pieces will give a better texture.
Step 3
Strain the chicken broth through a fine-mesh sieve to remove any impurities for a cleaner taste. Chill the strained broth thoroughly in the refrigerator. A cold broth is essential for the refreshing taste of Chogye Guksu.
Step 4
In a bowl, gently mix the shredded chicken with a pinch of salt, a pinch of pepper, and some mustard (adjust to your preference). Make sure the seasoning is evenly distributed. This step flavors the chicken.
Step 5
Now, let’s cook the somyeon noodles. In a large pot of boiling water, add 200g of somyeon noodles. Stir occasionally to prevent them from sticking together. Cook according to the package instructions, but aim for a slightly al dente texture. Rinse the cooked noodles thoroughly under cold water to remove excess starch and drain well. This rinsing step ensures the noodles are wonderfully chewy.
Step 6
In a bowl, combine 1 packet of the ready-made cold noodle broth with some of the chilled chicken broth (optional, for a richer flavor). Add 2 Tbsp sugar, 3 Tbsp vinegar, and 2 Tbsp prepared mustard. Stir well to combine. Taste and adjust the sugar and vinegar to achieve your desired sweet and sour balance.
Step 7
To assemble, place the cooked somyeon noodles into a deep bowl. Top with shredded cabbage, pickled radish wraps, and the seasoned chicken. Finally, pour the chilled Chogye broth over everything. Your refreshing and immunity-boosting Chogye Guksu is ready! It’s the perfect dish to beat the summer heat.
