This is a dish my mom loves the most, and I made it just like her recipe. It felt like a special treat after so long! Follow me for a taste of nostalgic comfort food!
Boiling the Red Beans- 3 cups dried red beans

Cooking Instructions
Step 1
First, combine 3 cups of dried red beans with 6 cups of water and bring to a boil. Once boiling vigorously, continue to simmer for 10 minutes, then discard this initial water. This step helps remove any bitterness or impurities from the beans. Rinse the beans thoroughly with clean water 2-3 times.
Step 2
Add 8 cups of fresh water to the rinsed red beans and simmer until the beans are very soft and mushy. Once they are fully cooked, use an immersion blender or a regular blender to purée them into a smooth paste. This smooth purée is essential for a rich and delicious red bean broth. (You can add a bit more water if using a blender to help with the puréeing.)
Step 3
Now, let’s make the noodle dough. In a bowl, combine 250g of flour, 150cc of cold water, 1 Tbsp of cooking oil, and 1 tsp of salt. Knead until a cohesive dough forms. Wrap the dough tightly in plastic wrap and refrigerate for at least 30 minutes. This resting period will make the noodles chewier. After resting, divide the dough into manageable portions. On a lightly floured surface, roll out each portion as thinly as possible, aiming for about 0.1mm thickness. The thinner you roll it, the softer and tastier your noodles will be.
Step 4
Once the dough is rolled thin, gently roll it up like a Swiss roll. Then, thinly slice the rolled dough into noodles, about 0.2mm wide. To prevent the noodles from sticking together, generously dust them with flour. Lay the cut noodles flat on a tray or large plate so they don’t clump up.
Step 5
In the pot with the prepared smooth red bean purée, add the freshly cut noodles, 1 tsp of salt, and 2 Tbsp of sugar. Stir well. Bring the mixture to a rolling boil, then cook until the noodles are tender and cooked through. Once the noodles float and are soft, your delicious red bean noodles are ready! Feel free to adjust the salt and sugar to your preference.
