Savory Mackerel Pasta: A Unique Homemade Dish Recipe

Ingredients- 1/4 salted mackerel fillet (add a pinch of salt if needed)
- 15 clams (purged of sand)
- 100g pasta (spaghetti or linguine recommended)
- 3 cloves garlic
- 1/3 stalk green onion (white part preferred)
- 1 Tbsp olive oil
- 2 Tbsp dry white wine (or cooking wine)
- 1/2 Tbsp all-purpose flour (for dusting mackerel)
- A pinch of whole peppercorns
- 1 pinch of salt (for seasoning)
Cooking Instructions
Step 1
In a pot, combine the purged clams and 200ml of water. Cover and simmer over medium heat for 4-5 minutes to create a flavorful clam broth. Strain the broth and set it aside.
Step 2
Lightly rinse the salted mackerel under running water to remove any surface saltiness. Dust the flesh side of the mackerel with 1/2 Tbsp of flour. This helps the sauce adhere better.
Step 3
Heat 1 Tbsp of olive oil (or cooking oil) in a preheated frying pan over medium heat. Place the floured mackerel in the pan and cook for about 2-3 minutes per side until golden brown and crispy. Once cooked, let it cool slightly, then carefully remove the bones and flake the flesh into large pieces.
Step 4
Finely chop the green onion into small pieces. Thinly slice the garlic cloves. Having your ingredients prepped makes the cooking process much smoother.
Step 5
Bring a pot of generously salted water to a boil. Add 100g of pasta and cook over medium heat according to package directions, aiming for al dente (usually 7-8 minutes). Reserve about 1 cup of the pasta cooking water before draining.
Step 6
In a clean frying pan, heat 1 Tbsp of olive oil over medium heat. Add the sliced garlic and chopped green onions, and sauté until fragrant. Sauté them separately initially to develop their individual flavors.
Step 7
Once the green onions have softened slightly, remove them from the pan and set aside. When the garlic is lightly golden, add the flaked mackerel and 2 Tbsp of white wine. Sauté gently until the alcohol evaporates and the mackerel is coated and slightly heated through. Be careful not to burn the garlic.
Step 8
Add the cooked pasta and 150ml of the reserved clam broth to the pan with the mackerel and garlic. Increase the heat to medium-high and stir continuously, allowing the sauce to reduce and thicken slightly as it coats the pasta. If the sauce becomes too dry, add a little of the reserved pasta water to reach your desired consistency.
Step 9
Finally, add the sautéed green onions back into the pan along with a pinch of freshly ground black pepper. Toss everything together quickly to combine. Your delicious mackerel pasta is now ready!

For an extra touch of flavor, drizzle a little extra virgin olive oil over the pasta just before serving. Enjoy this unique and flavorful homemade dish for a special occasion or a delightful everyday meal.
