Don’t let those extra potatoes go to waste! This recipe shows you how to make a wonderfully smooth and delicious potato soup that anyone can easily prepare. It’s perfect for a warm and satisfying meal or a nutritious snack, not just for special occasions!
Ingredients- 2 medium potatoes (approx. 300g)
- 1/2 onion (small size)
- 2 cups milk (400ml)
- 10g butter (approx. 1.5 tsp)
- Pinch of salt (to taste)
Cooking Instructions
Step 1
First, peel the potatoes and cut them into large chunks, about 1.5cm thick. You can also cut them into smaller pieces for easier mashing. Fill a steamer with water and bring it to a boil. Add the chopped potatoes and steam for about 15-20 minutes, or until they are tender. They are ready when a fork can easily pierce them.
Step 2
Peel and wash the onion, then thinly slice it into strips. Thinly slicing will help the onion release its natural sweetness when sautéed.
Step 3
Melt the butter in a heated pot over medium-low heat. Add the sliced onions and sauté slowly for about 5-7 minutes, until the onions become translucent and release a subtle sweet aroma. Sautéing the onions thoroughly will deepen the flavor of the soup significantly.
Step 4
Prepare a blender or immersion blender. Add the steamed potatoes and sautéed onions to the blender. Pour in 2 cups (400ml) of milk. (Important: Let the hot potatoes and onions cool down slightly before adding them to the blender to ensure safety. Avoid adding extremely hot ingredients directly.)
Step 5
Blend all the ingredients until smooth and creamy. Pour the blended mixture back into the pot and bring it to a simmer over medium-low heat. Once it starts to boil, reduce the heat to low and cook for another 2-3 minutes, stirring gently occasionally to prevent sticking and to achieve the desired consistency. If it’s too thick, you can add a little more milk to adjust.
Step 6
Finally, add a pinch of salt to season. It’s best to start with a small amount, taste, and add more as needed to suit your preference. A dash of black pepper can also enhance the flavor.
