  • 130g low-salt mild pollack roe
  • 1/2 Tbsp cooking wine (like Mirin)

Gently remove the membrane from the frozen mild pollack roe after thawing, or by rinsing briefly under cold water. Be careful not to burst the roe sacs. Drizzle 1/2 Tbsp of cooking wine over the roe and let it sit for a moment to help remove any fishy odors and enhance flavor.

Before mixing the pollack roe with seasonings, finely mince the carrot and chop the scallion (or green onion). It’s best to chop them very finely, almost like for fried rice or bibimbap, for a pleasant texture.

In a bowl, combine the prepared pollack roe with the minced carrot and chopped scallion. Add 1/2 Tbsp minced garlic, 1/2 Tbsp gochugaru, and 1 Tbsp sesame oil. Gently mix everything together until the seasonings are evenly distributed. Avoid mixing too vigorously to prevent the roe from breaking apart.
