Ingredients- 300g Aero (Chamnamul)
- 8 Frozen Shrimp, thawed
- 2 Dried Vietnamese Chilies
- 6cm White Spring Onion
- 1 Tbsp Oyster Sauce
- 1 Tbsp Minced Garlic
- 1 Tbsp Brown Rice Oil
- 1 tsp Sesame Oil
- 70ml Rice Wine (Cheongju)
Cooking Instructions
Step 1
Begin by washing the aero (chamnamul) thoroughly. Separate the stem and leaf portions by cutting them into two parts; this technique helps the seasoning penetrate better and improves the texture.
Step 2
Drain the thawed frozen shrimp using paper towels to remove excess moisture. Then, soak them in 70ml of rice wine (cheongju) for 2-3 minutes. This step removes any fishy odor and helps achieve a perfectly plump texture. Crumble the dried Vietnamese chilies and thinly slice the white spring onion.

Pro Tip: For enhanced flavor, consider cutting the shrimp in half horizontally. This allows the sauce to permeate more deeply, resulting in an even more delicious bite!

Heat a non-stick skillet over medium heat and add 1 Tbsp of brown rice oil. Add the minced garlic and sliced white spring onion, and stir-fry for about 1 minute until fragrant. It’s important to let the aromas of the garlic and onion infuse into the oil.

Now, add the stem portions of the aero (chamnamul) to the skillet. Continue to stir-fry for another 2 minutes over medium heat. Since the stems take slightly longer to cook than the leaves, it’s best to sauté them first.

Increase the heat to medium-high. Add the thawed frozen shrimp, the leaf portions of the aero (chamnamul), 1 Tbsp of oyster sauce, and the crumbled dried Vietnamese chilies. Stir-fry quickly for about 2-3 minutes, or until the shrimp turn opaque and vibrant in color. Be careful not to overcook, as this can make the shrimp tough.
Step 7
Finally, drizzle 1 tsp of sesame oil over the stir-fry for an added layer of aroma. Your delicious Aero and Shrimp Stir-fry is now ready! Serve it over warm rice for a wonderful meal.
