The wild chives gifted from the countryside have a wonderfully rich and fragrant aroma that truly signifies the arrival of spring. ★Secret to cleaning wild chives thoroughly: Just like trimming green onions, remove any yellowed or wilted leaves. For the bulbous part of the wild chives, peel off the outer layer of skin. Then, gently scrape off or shake away any black dirt stuck to the inside of the roots. Tip! For a clean finish without any grassy taste, soak them briefly in water mixed with 1 tablespoon of vinegar, then rinse thoroughly multiple times under running water.
