Soup Ingredients

  • 10 fresh asparagus spears
  • 1 medium onion
  • 2 medium potatoes
  • 20g unsalted butter
  • 300ml milk
  • 100ml heavy cream

Cooking Instructions

Step 1

First, prepare the vegetables. Peel the potatoes and cut them into approximately 2cm cubes so they cook evenly. Thinly slice the onion. Trim the tough ends off the asparagus and cut the spears into 3-4cm pieces. This preparation helps the vegetables cook faster, preserving their natural flavor and nutrients.

Step 1

Step 2

Place the cubed potatoes in a pot and add enough water to cover them completely. Bring to a boil over medium heat and cook for about 10-15 minutes, or until the potatoes are tender when pierced with a fork. Softly cooked potatoes blend more smoothly.

Step 2

Step 3

In a separate pan, melt the 20g of unsalted butter over medium-low heat. Add the sliced onion and the cut asparagus to the pan. Sauté for about 5 minutes until the onion becomes translucent and the asparagus is slightly tender. Sautéing the vegetables deepens their flavor and brings out their natural sweetness.

Step 3

Step 4

Let the cooked potatoes and the sautéed onion and asparagus cool slightly. Be careful when blending hot ingredients. Transfer the cooled vegetables to a blender along with 300ml of milk. Blend until the mixture is smooth and creamy. If the soup seems too thick, you can add a little more milk to reach your desired consistency.

Step 4

Step 5

Pour the blended soup mixture into a pot or Dutch oven. Stir in 100ml of heavy cream. Heat over medium-low heat, stirring gently, until the soup is heated through and begins to simmer. Reduce the heat to low and simmer for another 2-3 minutes to allow the flavors to meld and achieve the desired thickness. Avoid boiling for too long, as this can alter the taste. Serve the soup warm in bowls and enjoy!
