Quick & Easy 10-Minute Creamy Shrimp Mayo

Shrimp mayo is a beloved dish for many! After making it numerous times, I’ve perfected a convenient method without deep-frying. This recipe incorporates my personal touch for an extra special flavor. It’s a guaranteed hit with both kids and adults, so give it a try! ^__^

Main Ingredients

  • 200g frozen shrimp, peeled and deveined
  • 1/4 medium onion (approx. 50g), thinly sliced
  • 1 stalk green onion, finely chopped

Shrimp Marinade

  • 1 Tbsp cooking wine (15ml)
  • 1 pinch salt
  • 2 Tbsp cornstarch (30g)

Sauce

  • 2 Tbsp mayonnaise (30ml)
  • 1 Tbsp ketchup (15ml)
  • 15ml milk
  • 1 tsp sugar (5ml)
  • 1/2 tsp soy sauce (2.5ml)
  • 1/2 tsp minced garlic (2.5ml)
  • 1/2 tsp vinegar (2.5ml)

For Cooking

  • 1 Tbsp cooking oil (15ml)

Cooking Instructions

Step 1

First, rinse the frozen shrimp under cold water and pat them dry. In a bowl, combine the shrimp with 1 tablespoon of cooking wine and gently mix. Let it marinate for 5 minutes. While the shrimp are marinating, thinly slice the onion and finely chop the green onion. After about 2-3 minutes of marinating the shrimp, add a pinch of salt and mix again.

While the shrimp are marinating, prepare the sauce. In a small bowl, whisk together all the sauce ingredients: mayonnaise, ketchup, milk, sugar, soy sauce, minced garlic, and vinegar, until well combined and smooth.

Add 2 tablespoons of cornstarch to the marinated shrimp and toss until evenly coated. Heat 1 tablespoon of cooking oil in a non-stick pan over medium-low heat. Add the sliced onions and sauté for about 30 seconds until they start to soften. Then, add the cornstarch-coated shrimp to the pan and cook over medium heat, stirring occasionally, along with the onions, until the shrimp turn pink and are cooked through. Be careful not to let them burn. (Tip: To prevent the cornstarch from clumping due to the marinade, it’s better to cook the shrimp first until they start turning pink, then add the onions to sauté.)

Once the shrimp and onions are lightly browned (after about 1 minute of stir-frying), pour the prepared mayonnaise sauce into the pan. Increase the heat to high and stir-fry quickly for about 30 seconds, just until the sauce thickens slightly and coats the shrimp. Be careful not to overcook, as the sauce can burn.

As soon as the sauce starts to thicken and cling to the ingredients, immediately turn off the heat. Sprinkle the chopped green onions over the top and gently toss to combine. The fresh aroma of the green onions will enhance the flavor.

Transfer the finished creamy shrimp mayo to a serving plate. For an extra touch, you can sprinkle some dried parsley on top. This dish is best enjoyed immediately while it’s warm!
