Fragrant Crown Daisy and Tofu Salad

I adore herbs with unique fragrances and flavors! Cilantro, water parsley, crown daisy, bitter cress – I enjoy all kinds of greens and leafy vegetables. ^^*
Main Ingredients- 6 stalks of Crown Daisy (Shungiku)
- 1 block of Tofu (approx. 300g)
- 1 Tbsp crushed peanuts
Seasoning- 1/2 tsp minced garlic
- 2/3 Tbsp soy sauce (Korean traditional)
- 1 Tbsp sesame oil
- 2/3 tsp soybean paste (Doenjang)
- 1 tsp tuna extract
- 1 pinch chili flakes (optional)
- 1 Tbsp plum extract
- 1/2 tsp minced garlic
- 2/3 Tbsp soy sauce (Korean traditional)
- 1 Tbsp sesame oil
- 2/3 tsp soybean paste (Doenjang)
- 1 tsp tuna extract
- 1 pinch chili flakes (optional)
- 1 Tbsp plum extract
Cooking Instructions
Step 1
To enhance the tofu’s flavor and remove excess moisture, lightly sprinkle coarse salt on both the top and bottom of the tofu block.
Step 2
Place a heavy weight, like a press or a plate, on top of the tofu to naturally press out its own moisture. Leave it at room temperature for this step.
Step 3
You will notice moisture being released from the tofu over time. It’s important to thoroughly drain this water away!
Step 4
Trim the crown daisy, then soak it in water with 1 tablespoon of vinegar for about 10 minutes to remove any residual pesticides and refresh it. Afterward, rinse it thoroughly under running water 3-4 times. Once drained, cut the crown daisy into bite-sized pieces and place it in a bowl. Pour boiling water over it and blanch for just 2-3 minutes. Immediately rinse it in cold water to stop the cooking and squeeze out excess water. This process ensures the crown daisy retains its crisp texture.
Step 5
In a mixing bowl, add the pressed tofu and gently mash it with a fork or your hands. Then, add the prepared crown daisy and all the seasoning ingredients. Taste and adjust the seasoning as needed, adding a little at a time. Gently mix everything together with your hands, using a light touch to avoid mashing the crown daisy too much.
Step 6
The finished Crown Daisy and Tofu Salad offers a delightful combination of creamy, savory tofu and the fresh, aromatic scent of crown daisy. It’s a perfect side dish that stimulates the appetite. ^^*
Step 7
Lightly toast the peanuts in a dry pan to enhance their nuttiness. Then, coarsely chop them using a knife or a food processor.
