Chop Steak Ingredients- Beef (for steak) 400g (Chuck roll recommended)
- 1/2 Onion
- 1/3 Carrot
- 5 stalks Broccoli
- 5 button Mushrooms
- 10 whole Garlic cloves
- 20g Butter
- 5 Tbsp Cooking oil
- 1 Tbsp Flour
- 2 Tbsp Herb salt

- 2 Tbsp Soy sauce
- 2 Tbsp Sugar
- 1 Tbsp Vinegar
- 3 Tbsp Steak sauce
- 1 Tbsp Tonkatsu sauce
- 50ml Water
- 3 Tbsp Ketchup
- 2 Tbsp Soy sauce
- 2 Tbsp Sugar
- 1 Tbsp Vinegar
- 3 Tbsp Steak sauce
- 1 Tbsp Tonkatsu sauce
- 50ml Water
Cooking Instructions
Step 1
First, it’s crucial to remove the blood from the steak-cut beef. Gently press the beef with kitchen towels to absorb any excess blood. Removing blood thoroughly helps eliminate any gamey odor and ensures a clean taste.
Step 2
Cut the beef, from which the blood has been removed, into bite-sized cubes. Then, season it with herb salt (or salt and pepper). 400g of beef, along with the vegetables, is a generous amount for a family of four.
Step 3
While the beef is marinating, let’s make the delicious chop steak sauce. In a bowl, combine 3 Tbsp ketchup, 2 Tbsp soy sauce, 2 Tbsp sugar, 1 Tbsp vinegar, 50ml water, 3 Tbsp steak sauce, and 1 Tbsp tonkatsu sauce. Mix them well. Baek Jong-won’s special tip is adding ‘vinegar’ to the sauce! (Tip: The original recipe calls for 2 Tbsp of Worcestershire sauce, but if unavailable, you can substitute with soy sauce. However, if you substitute with soy sauce, the seasoning might be weaker, so adding 1 Tbsp of tonkatsu sauce helps balance the flavor.)
Step 4
Prepare the vegetables that will add richness to your chop steak. You’ll need 1/2 onion, 1/3 carrot, 5 broccoli stalks, 5 button mushrooms, and 10 whole garlic cloves. Dice them into bite-sized pieces, similar to the beef. (Tip: I used pre-blanched broccoli and cut 5 small stalks into two pieces.)
Step 5
For the whole garlic cloves, it’s best to cut them in half if they are small, so they cook nicely. You can add other vegetables you have on hand, but too many vegetables might make the chop steak taste bland. So, use a moderate amount or increase the sauce quantity accordingly.
Step 6
Now, here’s the second tip from Baek Jong-won! Add 1 Tbsp of flour to the marinated beef and toss to coat the surface of the meat. This step helps to lock in the juices and adds a tender texture to the dish.

After the beef is nicely browned, add all the prepared vegetables and stir-fry them together. (Tip: Actually, it’s better to add the mushrooms and broccoli a bit later, but I accidentally added them all at once. It still turned out delicious!)

Here’s the third tip from Baek Jong-won! Push the ingredients in the pan to one side, creating a space. Pour the prepared sauce into this empty area. Let the sauce simmer briefly before mixing it with the other ingredients. This allows the sauce to adhere better to each piece.

Stir-fry everything together until the sauce is well combined with the ingredients. I’m a bit impatient, so I mixed them quickly! Once the sauce coats the meat and thickens slightly, your Baek Jong-won chop steak is complete!
