Step 1

Step 2
First, let’s clean the cockles. To remove any mud or impurities from the shell surface, add a handful of coarse salt and gently scrub the cockles against each other, being careful not to break the shells. It’s important to wash them gently. Place the washed cockles in a pot with cold water from the start. Add about 1 teaspoon of salt per liter of water. Start boiling over high heat, and as soon as the water boils and about 5-6 cockles begin to open their shells, turn off the heat immediately. Be careful not to overcook them, as they can become tough. Quickly remove the boiled cockles and rinse them under cold water to cool them down; this will make the meat firmer and chewier.
Step 3
Now it’s time to extract the cockle meat. After boiling, the shells usually separate easily from the meat. Gently insert the tip of a spoon into the recessed area at the back of the cockle shell and twist slightly. You’ll hear a ‘pop’ sound as the shell cleanly separates. You can also use a toothpick. Carefully detach the shell, and remove any unsightly dark innards or debris attached to the adductor muscle. Rinse the cockle meat once more under running water.
Step 4
After extracting the cockle meat, we’ll make a delicious seasoning sauce to mix it with. In a bowl, combine 3 tablespoons of soy sauce, 1 tablespoon of red pepper flakes, 1 tablespoon of sugar, and 1 tablespoon of sesame oil. Mix well. Add the finely chopped scallions (or green onions) and a pinch of sesame seeds here, according to your preference. You can adjust the amount of sugar in the sauce to your liking. Pour this prepared sauce over the cockle meat and gently mix with a spatula or spoon as if tossing. The key is to mix them gently so that the cockle meat doesn’t break apart.
