Main Ingredients- 1 medium potato
- 1/4 carrot
- 2 Tbsp cooking oil
- Pinch of salt
- 1/2 tsp tuna extract (or soy sauce for soup)
Cooking Instructions
Step 1
First, wash and peel the potato thoroughly. Then, slice it into thin strips, similar to noodles. Thinner strips cook faster and have a better texture. Place the julienned potatoes in a bowl of cold water and soak for about 30 minutes. This step removes excess starch, which prevents the potatoes from sticking together or becoming mushy when stir-fried. Soaking also helps prevent the potatoes from browning.
Step 2
Now, heat a pan over medium heat and add 2 tablespoons of cooking oil. Once the oil is warm, add the drained potato strips, gently separating them to prevent clumping. Stir-fry for about 3-4 minutes until the potatoes start to look translucent and the edges are slightly golden. Lightly browning the exterior enhances the texture.
Step 3
Once the potatoes are partially cooked, add the julienned carrot (about 1/4 of a carrot) and stir-fry together. Carrots add vibrant color and a satisfying crunch. Continue to stir-fry for another 1-2 minutes until the carrots are well combined with the potatoes. It’s best to cook over high heat quickly so the carrots remain slightly crisp.
Step 4
It’s time to season. Add a pinch of salt to enhance the savory flavor and 1/2 teaspoon of tuna extract for a deeper umami taste. If you don’t have tuna extract, you can substitute it with soy sauce for soup. Feel free to adjust the seasoning according to your preference and the amount of ingredients. After adding the seasonings, stir-fry for another 30 seconds to ensure everything is evenly coated. Be careful not to overcook, as the potatoes can become too soft.
