Main Ingredients- 1 block Firm Tofu (for pan-frying)
- 1 stalk Scallion or Green Onion (about 20cm)
- Vegetable oil, for frying
Braised Tofu Sauce- 1.5 Tbsp Gochugaru (Korean chili flakes)
- 1 Tbsp Toasted Sesame Seeds
- 3 Tbsp Soy Sauce (Guk-ganjang or Jin-ganjang)
- 6 Tbsp Water
- 1 Tbsp Fish Sauce (Anchovy or other)
- 1 Tbsp Sesame Oil
- 2 Tbsp Oligodang (corn syrup) or Mulyeot (starch syrup)
- 1/2 tsp Black Pepper
- 1.5 Tbsp Gochugaru (Korean chili flakes)
- 1 Tbsp Toasted Sesame Seeds
- 3 Tbsp Soy Sauce (Guk-ganjang or Jin-ganjang)
- 6 Tbsp Water
- 1 Tbsp Fish Sauce (Anchovy or other)
- 1 Tbsp Sesame Oil
- 2 Tbsp Oligodang (corn syrup) or Mulyeot (starch syrup)
- 1/2 tsp Black Pepper
Cooking Instructions
Step 1
First, prepare 1 block of tofu. Using firm tofu intended for pan-frying will help maintain its shape when cooked, making it even more delicious. Cut the tofu into bite-sized pieces, about 1.5 to 2 cm thick. Then, place the cut tofu on a colander to drain for about 10 minutes. This step helps prevent oil splattering when frying and allows the sauce to penetrate better.
Step 2
Now, let’s prepare the scallions to add flavor to your braised tofu. Finely chop about 20cm of scallions or green onions. Having them chopped beforehand makes it convenient to add them directly to the sauce.

The key to delicious braised tofu is its sauce! In a bowl, combine 1.5 Tbsp gochugaru, 1 Tbsp toasted sesame seeds, 3 Tbsp soy sauce, 6 Tbsp water, 1 Tbsp fish sauce (you can substitute with soy sauce if fish sauce isn’t available), 1 Tbsp sesame oil, 2 Tbsp oligodang (adjust sweetness to your preference), and 1/2 tsp black pepper. Mix everything thoroughly with a spoon to create the sauce.
Step 4
Add the chopped scallions generously into the prepared sauce and mix well again. The refreshing taste from the scallions will further enhance the umami of the braised tofu.
Step 5
Now it’s time to pan-fry the tofu until golden brown. Heat a frying pan over medium heat with a generous amount of vegetable oil. Once the oil is sufficiently hot, carefully place the drained tofu pieces in the pan. Fry them, flipping them over occasionally, until both sides are golden brown and slightly crispy. This frying step gives the tofu a delightful texture.
Step 6
Push the golden-brown tofu pieces to one side of the pan, or temporarily remove them to a plate. Then, pour the prepared sauce evenly over the fried tofu. Reduce the heat to low and let the tofu simmer in the sauce until it is well absorbed and the sauce has thickened slightly. To prevent burning, gently shake the pan or spoon the sauce over the tofu periodically.
