Main Ingredients

  • 2 Abalones
  • 1/4 Onion
  • 2 bowls Cooked Rice (warm)
  • 2 Scallions
  • 1 Egg

Cooking Instructions

Step 1

First, prepare all the ingredients for your fried rice. You’ll need 2 fresh abalones, 1/4 onion, 2 scallions, and 1 egg. Make sure your rice is warm. For the seasoning, gather 1/2 tablespoon of oyster sauce, 2 tablespoons of chicken stock, 0.3 tablespoons of butter, and 2 tablespoons of cooking oil for stir-frying.

Step 1

Step 2

Rinse the abalones thoroughly under running water. Carefully separate the shell from the meat. Locate and remove the hard sand sac inside the abalone’s body. Also, remove the beak and the guts for a clean preparation. Once cleaned, finely chop the abalone meat for the fried rice.

Step 2

Step 3

Dice the onion coarsely so it retains some texture when cooked. Finely chop the scallions. These can be used as a garnish or mixed into the rice for added flavor.

Step 3

Step 4

Heat 1 tablespoon of cooking oil in a medium-heat pan. Fry the egg to your preference. You can make a sunny-side-up egg to place on top of the rice, or cook it through and stir it into the rice. Set the fried egg aside for now.

Step 4

Step 5

Add the remaining 1 tablespoon of cooking oil to the preheated pan over medium heat. Sauté the coarsely diced onion until it becomes translucent. Once the onion is about halfway cooked, add the chopped abalone and stir-fry briefly. Be careful not to overcook the abalone, as it can become tough.

Step 5

Step 6

Now, add the 2 bowls of warm cooked rice to the pan. Break up any clumps with your spatula and stir-fry until the rice is loose and fluffy. Using warm rice is key to achieving a non-clumpy, perfect fried rice texture.

Step 6

Step 7

Once the rice is sautéed, pour in the oyster sauce and chicken stock. Stir-fry everything together over high heat until well combined. Ensure the sauce coats each grain of rice evenly for maximum flavor.

Step 7

Step 8

Finally, reduce the heat to low and add the 0.3 tablespoons of butter. Stir until the butter melts, adding a rich, nutty aroma. Mix it thoroughly into the rice to finish.

Step 8

Step 9

Transfer the finished abalone fried rice to a serving bowl. Top with the prepared fried egg and sprinkle with the chopped scallions for a beautiful garnish.

Step 9

Step 10

Your delicious abalone fried rice, with its chewy abalone and rich buttery flavor, is now ready to enjoy!
