Easy Stir-fried Pork and Cabbage Recipe Using Pork Tenderloin – Perfect for Dinner or a Side Dish!
This recipe utilizes pork tenderloin, originally intended for Japchae, to create a quick and simple one-bowl meal. It’s not only great as a rice bowl but also serves as an excellent main side dish for dinner or a fantastic accompaniment to drinks. The tender pork, sweet cabbage, and rich seasoning come together to create a delightful dish the whole family can enjoy.
Main Ingredients- 150g Pork Tenderloin (can be substituted with pork shoulder or leg)
- 2 handfuls Cabbage (approx. 130g)
Seasoning & Aromatics- 1.5 Tbsp Soy Sauce
- 1 tsp Oyster Sauce
- 1 Tbsp Cooking Wine (Mirin, etc.)
- 1 tsp Oligodang (adjust sweetness as desired)
- 1 tsp Minced Garlic
- 1 tsp Ginger Powder (to eliminate pork odor; can omit if unavailable)
- 1 tsp Sesame Oil
- Pinch of Black Pepper
- Pinch of Toasted Sesame Seeds
- 1.5 Tbsp Soy Sauce
- 1 tsp Oyster Sauce
- 1 Tbsp Cooking Wine (Mirin, etc.)
- 1 tsp Oligodang (adjust sweetness as desired)
- 1 tsp Minced Garlic
- 1 tsp Ginger Powder (to eliminate pork odor; can omit if unavailable)
- 1 tsp Sesame Oil
- Pinch of Black Pepper
- Pinch of Toasted Sesame Seeds
Cooking Instructions
Step 1
Slice the pork tenderloin into thin strips, similar to those for Japchae, or into bite-sized thin pieces suitable for stir-frying. Gently pat dry any excess blood with paper towels before slicing for a cleaner taste. Pork shoulder or leg can also be used.
Step 2
In a large bowl, combine the sliced pork, 1.5 Tbsp soy sauce, 1 Tbsp cooking wine, a pinch of black pepper, 1 tsp ginger powder, and 1 tsp minced garlic. Gently mix with your hands until well combined. Marinating the pork this way tenderizes it and allows the flavors to penetrate, resulting in a more delicious stir-fry. Let it marinate for at least 10 minutes.
Step 3
Wash the cabbage thoroughly under running water and remove the core. Cut it into large, bite-sized pieces for stir-frying. If you enjoy cabbage, feel free to add more for a richer texture. Remember that cabbage shrinks significantly when cooked, so it’s good to prepare a generous amount.
Step 4
Heat a pan over medium heat. Add the marinated pork and stir-fry, breaking it apart so it doesn’t clump together, until it starts to brown.
Step 5
Continue stir-frying until the pork is no longer pink and is cooked through. Maintain medium heat to prevent burning.
Step 6
Once the pork is cooked, add the chopped cabbage to the pan and stir-fry together. The key to a great taste is to stir-fry until the cabbage is tender-crisp, retaining some of its crunchiness without becoming too soggy. As the cabbage begins to soften slightly, add 1 tsp oyster sauce and stir-fry briefly to enhance the flavor. Turn off the heat, then drizzle in 1 tsp sesame oil and sprinkle with toasted sesame seeds for a nutty finish. Serve over warm rice as a rice bowl or enjoy as a side dish!
