Savory Marinated Beef Stir-Fry for the Whole Family

For our meat-loving family, this is a go-to meal! We often buy pre-marinated beef from the large supermarket, store it in the freezer, and on those ‘what should we eat today?’ days, we pull it out, add plenty of vegetables, and stir-fry it. It’s a simple yet nutritious side dish that the whole family can enjoy together, eliminating the need for separate meals for kids and adults.

Main Ingredients

  • Marinated Beef Bulgogi, about 300g
  • 1 Onion
  • 1/2 Green Onion
  • 1 handful of King Oyster Mushrooms (or similar)
  • A small amount of Carrot
  • A small amount of Broccoli
  • 1 Tbsp Cooking Oil
  • A pinch of Sesame Seeds

Optional Add-ins for Adults

  • 1 Tbsp Soy Sauce
  • 1 Korean Green Chili Pepper
  • A little Black Pepper

Cooking Instructions

First, take one onion and cut it in half. Thinly slice one half. Finely mince the other half.

My children tend to pick out onions if they can feel the texture, so I always finely mince half of it. Since onions are so good for you, I like to hide them by mixing the minced onion into the marinade so they eat it without realizing!

Prepare the green onion in the same way: slice half of it thinly and mince the other half. I used to mince it all for the kids, but after stir-frying, it becomes so soft that you can barely tell it’s there. However, adults often prefer to have some vegetable texture along with their meat! So, I use a combination of both sliced and minced. ^^

Julienne the carrot into thin strips that are easy for children to eat.

Trim the tough ends off the king oyster mushrooms and give them a light rinse.

I’m using broccoli that I’ve already blanched. Broccoli is packed with nutrients, especially in the stems, so blanching the stems along with the florets is a great idea.

With all the ingredients prepared, shall we start making our delicious marinated beef stir-fry?

Heat 1 tablespoon of cooking oil in a pan over medium-low heat. Add the minced onion and minced green onion first to create an aromatic base. We’ll add the sliced vegetables later. Sautéing the green onions releases a wonderful fragrance, and onions take a while to soften. Since even slightly undercooked onions can be perceived as spicy by children, it’s best to cook them first. Cooking them longer also helps them disappear into the dish undetected.

Once the onions become translucent, add the marinated beef bulgogi. Gently break up any clumps with your spatula as you stir-fry.

Now, add the julienned carrots and stir-fry everything together until well combined.

The marinated beef bulgogi from stores is often quite thin. If you just stir-fry thin meat, it tends to clump together. I prefer a thinner, more separated texture, so I use tongs to break apart any clumps as I cook. Once the beef is mostly browned, gently separate any stuck-together pieces with your tongs.

Once the beef is nicely separated, add the remaining sliced green onions and onions, and continue to stir-fry.

Next, add the king oyster mushrooms and cook until everything is tender. You’ll notice the vegetables releasing their juices, creating a lovely sizzle. This natural moisture is enough to make a deliciously moist bulgogi without adding extra water.

Finally, add the blanched broccoli and stir-fry for just another minute before turning off the heat. Although the beef is marinated, the generous amount of vegetables can dilute the seasoning. If you prefer a milder flavor, you can eat it as is. For those who like it a bit saltier, stir in 1 tablespoon of soy sauce, 1 minced green chili pepper, and a pinch of black pepper, then stir-fry once more. A little sesame oil or a sprinkle of sesame seeds at the end is also a great addition! 🙂
