Ingredients

  • 1 medium-sized chicken (approx. 1.3-1.4 kg)
  • Cooking oil or peanut oil (enough to drizzle)
  • 3 teaspoons coarse salt
  • A pinch of black pepper
  • 2-4 sprigs fresh thyme
  • 3-4 cloves garlic (unpeeled)

Cooking Instructions

Step 1

Trim the tail end of the chicken and set it aside. Generously season the entire chicken with coarse salt, ensuring an even coating. Follow with a light sprinkle of black pepper.

Step 1

Step 2

Drizzle cooking oil or peanut oil all over the chicken. There’s no need for vigorous massaging; simply ensure the oil coats the surface evenly. Place the unpeeled whole garlic cloves inside the chicken cavity. This will infuse a subtle garlic aroma into the meat.

Step 2

Step 3

Lay 2-3 sprigs of fresh thyme on the bottom of your roasting tray to add aroma to the cooking environment. Then, place the remaining thyme sprigs on top of the chicken. The fragrant notes of thyme will complement the chicken beautifully.

Step 3

Step 4

Preheat your oven to 180°C (350°F) with the convection setting. Place the chicken on its side in the preheated oven and roast for 15 minutes. Then, flip the chicken to its other side and roast for another 15 minutes. The convection function helps circulate heat for a crispier exterior.

Step 4

Step 5

Finally, lay the chicken flat on its breast or back and roast for an additional 10 minutes. If your chicken is larger or your oven runs cooler, you may need to increase the cooking time. Continue roasting until the chicken is cooked through, ensuring it’s juicy and tender inside.

Step 5

Step 6

For a side dish, we recommend making diced potato fries. Cut potatoes into small cubes, then pan-fry them in peanut oil with salt over medium-low heat until tender. In the final moments, increase the heat to high to achieve a crispy finish. This adds a wonderful textural contrast to the chicken.

Step 6

Step 7

Enjoy this delicious, savory roasted chicken with crispy potato fries and a cold beer – the perfect weekend treat! Bon appétit!
