  • 1/2 cup finely chopped ripe kimchi (approx. 50g)
  • 1/4 small onion, finely chopped (approx. 25g)
  • 50g mozzarella cheese (shredded)
  • 2 slices of bread
  • 1 tbsp ketchup

Prepare one small sweet potato by peeling its skin thoroughly. Place it in a steamer or boiling water and cook for about 20-25 minutes until tender. While still warm, mash the cooked sweet potato smoothly with a fork or a masher until no lumps remain. If you have leftover roasted sweet potato, you can briefly microwave it to warm it up. Mashing while warm ensures a smoother texture.

To the mashed sweet potato, add 1/2 cup of finely chopped ripe kimchi and 1/4 cup of finely chopped onion. Then, add 50g of mozzarella cheese.
