  • 2 Tbsp Mirin (sweet rice wine)
  • 2 Tbsp Soy Sauce
  • 0.3 Tbsp Dashida (or MSG/seasoning powder)

First, to achieve a chewy texture, prepare 100g of aburaage. Blanch it in boiling water for about 30 seconds to remove excess oil and soften it. Drain thoroughly on a sieve.

After blanching the aburaage, get a clean pot ready. If you have a small pot for simmering the aburaage separately from the ramen, that would be even better.

Now it’s time to make the special soy sauce sauce that will simmer the aburaage to a sweet and savory perfection. In a small pot, combine 2 Tbsp water, 2 Tbsp mirin, 2 Tbsp soy sauce, and 0.3 Tbsp Dashida for added umami. Mix well.

Once the soy sauce mixture begins to boil, carefully add the blanched and drained aburaage.

Reduce the heat to medium-low and let the aburaage simmer, absorbing all the delicious sauce. Stir occasionally, as if stir-frying, until the sauce becomes reduced and coats the aburaage. It will look glossy and appetizing when the sauce is almost fully reduced. At this point, remove the aburaage and set aside.

Now, in a clean pot for the ramen, pour in 550ml of water. You can refer to the water amount indicated on the ramen package, but feel free to adjust slightly based on your personal preference.
