First, peel the onion and slice it thinly into matchsticks. Sliced onions will add a tender texture when stir-fried.

Wash the fresh chives thoroughly under running water to remove any dirt or debris. Then, cut them into bite-sized pieces, about 3-4 cm long. The fragrant aroma of chives will enhance the dish’s flavor.

In a wide bowl, crack the 2 eggs. Add a pinch of salt according to your preference. Use chopsticks or a whisk to beat the eggs thoroughly, mixing the yolks and whites until well combined and no eggy smell remains.
