Gently scrape off any dirt from the roots with a knife, then divide the spinach into portions and trim the stems. Remove any yellowed or wilted leaves, wash thoroughly under running water, and lightly drain.

Bring a generous amount of water to a rolling boil in a pot, then add 0.5 tablespoon of coarse sea salt. Carefully add the washed spinach, starting with the root ends. Once the spinach wilts, turn it over and blanch for about 30 seconds. It’s crucial to blanch it just enough so it retains a slight crispness, often described as ‘salkang’ in Korean. Overcooking will make it mushy and unappetizing.

Immediately after blanching, remove the spinach from the hot water and rinse it under cold running water to stop the cooking process and cool it down completely. Gently squeeze out as much water as possible from the spinach by hand. Excess water will dilute the seasoning and affect the taste.
