Ingredients

  • 150g glutinous rice flour (adjust amount depending on the moisture content of the pumpkin)
  • 1/2 pumpkin (approx. 200-250g)
  • 1-2 Tbsp sugar (adjust according to the sweetness of the pumpkin)

Cooking Instructions

Step 1

First, prepare the pumpkin. Wash the pumpkin thoroughly, then cut it into bite-sized pieces. Remove the seeds cleanly. Place the pumpkin pieces in a microwave-safe bowl, cover with plastic wrap, and microwave for about 7-10 minutes, or until the pumpkin is tender and cooked through. You can check for doneness by piercing it with a fork; it should slide in easily.

Step 1

Step 2

Be cautious when handling the hot pumpkin from the microwave. Let it cool slightly, then use a spoon to peel off the skin. Place the peeled pumpkin into a large bowl.

Step 2

Step 3

Mash the pumpkin smoothly using a fork or a potato masher. It’s important to mash it thoroughly without any lumps. Add 150g of glutinous rice flour and 1-2 Tbsp of sugar to the mashed pumpkin. Mix well with a spatula or your hands to form a dough. Adjust the amount of glutinous rice flour based on the pumpkin’s moisture content. If the dough is too wet, add a bit more flour; if it’s too stiff, add a tiny amount of water until you achieve a soft dough, similar to one for making rice cakes.

Step 3

Step 4

Once the dough is ready, shape it into your desired size and form. You can make them round and flat, or get creative and mold them into fun shapes for kids! If the dough sticks to your hands, lightly dust your hands with glutinous rice flour to make shaping easier.

Step 4

Step 5

Heat a frying pan over medium heat and add a generous amount of cooking oil. Place the shaped glutinous rice pumpkin pancake dough onto the hot pan. Make sure to leave some space between each piece so they don’t stick together.

Step 5

Step 6

Cook slowly over medium heat. Once one side is golden brown, flip the pancakes and cook the other side until it’s also golden brown. Continue cooking until the outside is crispy and the inside is chewy. Your delicious glutinous rice pumpkin pancakes are ready! For an extra touch of sweetness, you can serve them with honey or corn syrup.
