Hello everyone! The weather is getting pleasantly warmer, signaling it’s time to get outdoors and be active. After being cooped up indoors all winter, it’s wonderful to finally get out for walks and enjoy the fresh air. This morning, I made some Dubu Kimchi, and since it had been a while, I happily cleared the entire plate! This dish, featuring perfectly fried tofu alongside savory stir-fried kimchi, is a delightful way to enjoy a hearty meal at home.

Main Ingredients

  • Well-fermented Kimchi (Kimjang Kimchi)
  • 1 block Tofu
  • 1/4 Onion
  • 1/2 Scallion (Green Onion)
  • Sesame seeds, for garnish
  • 1 Tbsp Sesame oil
  • 1/3 Tbsp Sugar

Cooking Instructions

Step 1

Cut the tofu into bite-sized cubes, about 1.5 cm thick. Thinly slice the onion into strips and diagonally slice the scallion. Diagonal cuts make the scallion look more appealing.

Step 2

Heat a generous amount of cooking oil in a frying pan over medium-high heat. Pan-fry the tofu pieces until they are golden brown and slightly crispy on all sides. This will create a lovely contrast between the crispy exterior and the soft interior. Remove the fried tofu and set aside on a plate.

Step 3

In the same pan, add a little more cooking oil if needed. Add the chopped kimchi, sliced onion, and sliced scallions to the pan. Stir-fry everything together. If your kimchi is a bit too sour, adding a touch of sugar will help balance the flavor.

Step 4

Once the kimchi has softened slightly from stir-frying, add the sesame seeds, 1 tablespoon of sesame oil, and 1/3 tablespoon of sugar. The sugar will enhance the kimchi’s savory notes and contribute to the overall deliciousness.

Step 5

Continue to stir-fry until all the ingredients are well combined and fragrant. Cook until the onions become translucent and the kimchi is tender and flavorful. This process deepens the taste.

Step 6

Now, it’s time to plate your masterpiece! Arrange the warm, pan-fried tofu pieces attractively on a serving dish. Spoon the glistening, stir-fried kimchi generously over the tofu. Enjoy your delicious homemade Dubu Kimchi!
