Super Simple Breakfast! Potato Soup Recipe with Enhanced Flavor using Milk and Cream
Potato soup is incredibly easy for anyone to make and is perfect to enjoy warm and smooth as a snack or a meal replacement. Start your day on a delightful note with its comforting flavor and warmth.
Main Ingredients- 2 large potatoes
- 1/2 onion
- A small amount of the white part of a leek
- 1 knob of butter
- A pinch of Parmesan cheese
- A touch of chicken stock (optional)
- 1 cup milk (200ml)
- 1/2 cup heavy cream (100ml)
Cooking Instructions
Step 1
We’ll prepare the star ingredient, potatoes, along with sweet onion and leek for added sweetness. If you don’t have leeks, feel free to omit them. First, peel the potatoes thoroughly, rinse them briefly under running water, then cut them in half for easier cooking. Slice them thinly. Peel and thinly slice the onion. Use only the white parts of the leek and chop them finely.
Step 2
Melt a knob of butter in a wide pot to add a rich, buttery flavor.
Step 3
Once the butter is melted, add the thinly sliced onion and chopped leek. Sauté them over medium-low heat, stirring constantly to prevent burning. It’s important to stir gently as the ingredients meld together.
Step 4
When you can smell the fragrant leek and the onion has become translucent and softened, add the sliced potatoes and sauté them together. At this stage, lightly season with salt and pepper to enhance the flavors of the potatoes and onions.
Step 5
Once the edges of the potatoes look coated with butter and slightly cooked, pour in enough water to just cover the ingredients and bring it to a boil. For an extra depth of flavor, you can add a bit of chicken stock at this point. This is optional and can be skipped.
Step 6
When the ingredients are tender and cooked through, turn off the heat and let the pot cool slightly. It’s safer to blend when the mixture is not piping hot. Once it’s cooled down a bit, use an immersion blender to purée the ingredients until smooth.
Step 7
Once the potatoes are smoothly blended without any lumps, pour in 1 cup of milk and 1/2 cup of heavy cream. Return the pot to low heat and simmer gently, stirring continuously to achieve a wonderfully creamy texture.
Step 8
Keep stirring over medium-low heat to prevent sticking at the bottom. As the soup thickens to your desired consistency, stir in the Parmesan cheese to your liking for added richness. Finally, taste the soup and adjust the seasoning with salt and pepper to suit your preference. Your delicious potato soup is almost ready!
Step 9
If you have any leftover bread, toast it in butter until golden brown to make croutons. These add a delightful crunch when served on top of the soup.
