Step 1
First, prepare about 300g of fresh Napa cabbage (young or inner leaves). Cut it into bite-sized pieces, about 5cm in length, making sure not to cut them too thinly. This size helps maintain a pleasant texture after blanching and allows the seasoning to adhere well.

Now, it’s time to lightly blanch the cabbage. Bring water to a boil, add 1 teaspoon of coarse salt, and carefully add the cut cabbage. Blanch for just 30 seconds to 1 minute. The key is to keep the cabbage slightly crisp, not overly soft or mushy. Over-blanching will result in an unpleasant texture.
