Main Ingredients

  • 2 bunches scallions (approx. 2kg)
  • 4 cups gochugaru (Korean chili flakes)
  • 20 dried red chilies
  • 1 cup soup soy sauce (guk-ganjang)
  • 1 cup anchovy sauce (myeolchi aekjeot)
  • 500ml starch paste (flour paste)
  • 1 cup minced garlic
  • 1 tablespoon minced ginger
  • 1/2 pear
  • 1 onion
  • 1 apple
  • 1 tangerine
  • 2 semi-dried squid
  • 2 tablespoons flour (for starch paste)
  • A pinch of toasted sesame seeds

Cooking Instructions

Step 1

First, we’ll make the base broth for delicious kimchi. In a pot, add some radish, onion, and green onion and bring to a boil. Then, add kelp and anchovies to enhance the savory flavor. Remove all the solids, leaving only the clear broth. Next, dissolve 2 tablespoons of flour in cold water and cook it over low heat, stirring constantly, until it thickens into a starch paste. Let this paste cool down. (Total volume of 500ml required).

Next, let’s prepare the fruit-based seasoning paste that adds a rich umami to the kimchi. In a blender, combine the peeled tangerine, cored pear, cored apple, and dried red chilies. Add about 1 cup of the cooled starch paste made earlier and blend until smooth. To this fruit paste base, add the gochugaru, soup soy sauce, anchovy sauce, minced garlic, and minced ginger. Mix everything well to create a flavorful kimchi seasoning paste.

Trim any yellow or dirty leaves from the scallions and wash them thoroughly. It’s crucial to drain the washed scallions completely in a colander; this prevents the kimchi from becoming soggy and helps it stay crisp for longer. Lightly sprinkling soup soy sauce only on the root parts of the scallions will add a deeper flavor.

Prepare the semi-dried squid by cutting it into bite-sized pieces. Adding these squid pieces to the kimchi seasoning mixture will provide a chewy texture and a more abundant flavor.

Now for the final step! Gently coat the pre-seasoned scallions with the delicious kimchi seasoning, spreading it evenly. Be careful not to break the scallions while mixing; handle them with care. Once all the scallions are well-coated with the seasoning, your delicious autumn scallion kimchi is complete! Sprinkle with toasted sesame seeds for a final touch and appealing presentation.
