Do you ever find yourself with leftover fried chicken? Instead of letting it go to waste, transform it into a fantastic and simple Chicken Rice Bowl! This dish offers a delightful balance of sweet and savory flavors, making it a satisfying meal for any occasion. It’s quick to prepare and a great way to give your leftover chicken a delicious second life.
Main Ingredients- 4 pieces leftover fried chicken
- 1/2 medium onion
- 1 large egg
- 1/2 tsp minced garlic
Sauce Ingredients- 4 Tbsp soy sauce
- 2 Tbsp cooking wine (mirin or sake)
- 2 Tbsp corn syrup (or honey, sugar)

Cooking Instructions
Step 1
Carefully remove the bones from the leftover fried chicken. Shred the meat into bite-sized pieces, following the natural grain of the chicken. You can trim off any excessively thick parts of the fried coating if desired.
Step 2
Peel and thinly slice the half onion. Heat a small amount of cooking oil in a pan over medium-low heat. Add the sliced onions and minced garlic, and sauté until the onions become translucent and fragrant.
Step 3
Once the onions are softened, add the soy sauce, cooking wine, and corn syrup to the pan. Stir well to combine these ingredients, creating the delicious sauce for your chicken bowl. Adjust the sweetness by adding more or less corn syrup according to your preference.

Add the shredded chicken meat to the pan with the sauce. Gently toss the chicken to ensure it’s evenly coated without breaking it apart too much.

Stir-fry the chicken in the sauce over medium heat for about 2-3 minutes, allowing the flavors to meld and the sauce to thicken slightly. The chicken should look glossy and smell wonderfully aromatic.

In a separate pan or using a microwave, prepare scrambled eggs. Cook until just set. Alternatively, you can use a fried egg or a poached egg as a topping.
