Main Ingredients- 100g fresh spinach
- 100g oyster mushrooms
- 1/4 onion
- 3 cherry tomatoes
- 10 sliced olives
- 4 eggs
- 100ml milk

- 0.5 tsp salt
- Pinch of black pepper
- Pinch of grated Parmesan cheese

Cooking Instructions
Step 1
Begin by thoroughly washing 100g of fresh spinach and 100g of oyster mushrooms. Separate the spinach leaves and tear the oyster mushrooms into bite-sized pieces. Prepare them for cooking.
Step 2
Finely slice 1/4 onion. Hull and quarter 3 cherry tomatoes. Prepare about 10 sliced olives, halving them if desired.
Step 3
In a bowl, crack 4 eggs. Add 100ml of milk, 0.5 tsp of salt, and a pinch of black pepper. Whisk everything together gently with a fork or whisk until well combined to create the egg mixture.

Heat 1 Tbsp of olive oil in a non-stick skillet over medium-high heat. Add the sliced onion, spinach, and oyster mushrooms. Sprinkle with 0.5 tsp of salt. Sauté for 1-2 minutes until the vegetables are slightly softened and fragrant.
Step 5
Reduce the heat to low. Pour the egg mixture evenly over the sautéed vegetables. Cover the skillet with a lid and cook slowly until the egg is mostly set but still slightly moist on top. Be careful not to burn the bottom.

Once the frittata is about halfway set, arrange the quartered cherry tomatoes and sliced olives over the surface. Sprinkle a pinch of grated Parmesan cheese evenly on top for added flavor.

Cover the skillet again and continue to cook on very low heat for about 20 minutes, or until the frittata is fully cooked through and firm. It’s crucial to maintain a low heat to prevent burning the bottom. Check for doneness and serve warm.
