Cooking Instructions

Begin by thoroughly washing 100g of fresh spinach and 100g of oyster mushrooms. Separate the spinach leaves and tear the oyster mushrooms into bite-sized pieces. Prepare them for cooking.

Finely slice 1/4 onion. Hull and quarter 3 cherry tomatoes. Prepare about 10 sliced olives, halving them if desired.

In a bowl, crack 4 eggs. Add 100ml of milk, 0.5 tsp of salt, and a pinch of black pepper. Whisk everything together gently with a fork or whisk until well combined to create the egg mixture.

Heat 1 Tbsp of olive oil in a non-stick skillet over medium-high heat. Add the sliced onion, spinach, and oyster mushrooms. Sprinkle with 0.5 tsp of salt. Sauté for 1-2 minutes until the vegetables are slightly softened and fragrant.
