Cooking Instructions

Step 1

First, prepare the fresh squid bodies. Carefully separate the tentacles from the body, remove the transparent quill in the center, and rinse thoroughly. Making diagonal scores on the inside of the squid body helps the sauce penetrate better, making it tastier. Using a scallion cutter can create natural-looking scores.

Trim off the triangular fins from the squid body. Then, cut the body lengthwise in half and slice it into thick strips, about 1cm wide. (Total from 2 squid bodies, approx. 300g)

In a large bowl, combine the sliced squid with all the seasoning ingredients (Gochugaru 2.5 Tbsp, Gochujang 1 Tbsp, Soy sauce 4 Tbsp, Cheongju 3 Tbsp, Oligosaccharide 1 Tbsp, Plum extract 1 Tbsp, Sesame oil 1 Tbsp, Black pepper, a pinch, Minced garlic 1 Tbsp). Gently mix well to ensure the sauce evenly coats the squid. Marinating for at least 15 minutes will enhance the flavor.

Now, it’s time to stir-fry the pork. Heat a pan over medium-high heat, add the pork shoulder (400g), and stir-fry until evenly browned. This helps to render excess fat.

When the pork is almost cooked through, add the sliced onion (1/2), chopped green onion (1 stalk, cut diagonally, white parts separated), and minced garlic (1 Tbsp). Stir-fry together until the vegetables are slightly softened and fragrant.

Add the marinated squid to the pan with the pork and vegetables. Stir-fry quickly. It’s important to cook the squid for only about 1-2 minutes over high heat to prevent it from becoming tough.
