How to Make Delicious Oyster and Bean Sprout Rice Casserole with Savory Dill Soy Sauce
Oysters are a seasonal delight, and we love incorporating them into our winter meals. Today, we’re making a hearty casserole-style rice dish with fresh oysters and crunchy bean sprouts, served with a fragrant dill-infused soy sauce. The subtle aroma of dill already hints at the coming spring!
Oyster and Bean Sprout Rice Ingredients- 2 cups Rice (mixing in sprouted brown rice is recommended)
- 200g Fresh Bean Sprouts
- 200g Fresh Oysters
Springtime Dill Soy Sauce- A small bunch of Dill (finely chopped)
- 5 Tbsp Dark Soy Sauce
- 1 Tbsp Plum Extract (Maesilcheong)
- 1/2 Tbsp Red Pepper Flakes (Gochugaru)
- 1/2 Tbsp Minced Garlic
- 1 Tbsp Sesame Oil
- 1 Tbsp Toasted Sesame Seeds
- A small bunch of Dill (finely chopped)
- 5 Tbsp Dark Soy Sauce
- 1 Tbsp Plum Extract (Maesilcheong)
- 1/2 Tbsp Red Pepper Flakes (Gochugaru)
- 1/2 Tbsp Minced Garlic
- 1 Tbsp Sesame Oil
- 1 Tbsp Toasted Sesame Seeds
Cooking Instructions
Step 1
First, prepare 2 cups of rice. You can use white rice, but mixing in sprouted brown rice adds a wonderful nutty flavor and extra nutrients. Rinse the rice thoroughly and soak it for at least 1 hour. For casserole-style rice (sot-bap), the water-to-rice ratio is typically 1:1. However, since bean sprouts release a lot of moisture, you’ll want to use slightly less water than usual. (e.g., for 2 cups of rice, use about 1.5 cups of water).
Step 2
Generously add about 200g of prepared bean sprouts; this ensures a satisfying crunchy texture between the rice grains, making the dish even more delicious. Place the soaked rice and bean sprouts into your pot or rice cooker. Pour in the measured cooking water. Bring to a boil over high heat. Cover the pot and once steam starts escaping, maintain high heat.
Step 3
Continue boiling over high heat for about 5 to 7 minutes. When you notice the water level has receded and looks shallow, it’s time for the key step! Carefully arrange the 200g of fresh oysters evenly over the top of the rice. Immediately reduce the heat to low and simmer for another 10 minutes. After turning off the heat, let the rice steam for 5 minutes. This gentle steaming allows the oysters to cook perfectly without becoming tough, infusing the rice with their delicious briny flavor.

Your delicious Oyster and Bean Sprout Rice Casserole is now ready! Lift the lid to reveal plump, perfectly cooked oysters nestled amongst crisp bean sprouts and fluffy rice. While the rice is cooking, let’s prepare the flavorful dill soy sauce. Take a small bunch of neatly prepared dill and finely chop it. In a small bowl, combine the chopped dill with 5 Tbsp dark soy sauce, 1 Tbsp plum extract, 1/2 Tbsp red pepper flakes, 1/2 Tbsp minced garlic, 1 Tbsp sesame oil, and 1 Tbsp toasted sesame seeds. Mix everything well. The fragrant dill combined with the savory soy sauce makes this a perfect condiment that you’ll want to pour over everything!
