  • 4 cups small dried anchovies (janmyeolchi)
  • Mixed nuts (your preference)
  • A little dried cranberries
  • A little dried blueberries

Gochujang Anchovy Stir-fry Seasoning

  • 2 Tbsp Gochujang (Korean chili paste)
  • 2 Tbsp cooking wine (mirin or rice wine)
  • 1 Tbsp plum extract (maesilcheong)
  • 1 Tbsp minced garlic
  • 1/2 Tbsp sugar
  • 1 Tbsp corn syrup (oligosaccharide)
  • 1 Tbsp sesame oil
  • 1 Tbsp sesame seeds

Nutty Anchovy Stir-fry Seasoning

  • 2 Tbsp soy sauce
  • 2 Tbsp sugar
  • 2 Tbsp corn syrup (oligosaccharide)
  • 1 Tbsp cooking wine (mirin or rice wine)

Cooking Instructions

Step 1

First, place 2 cups of small dried anchovies (using a paper cup as a measure) in a dry pan. Stir-fry them over low heat until they turn a light golden brown, being careful not to burn them. This initial stir-frying removes any fishy smell and enhances their nutty flavor.

Once the anchovies are nicely toasted, transfer them to a sieve. Gently shake the sieve to remove any powdery residue or small crumbs. This step ensures a cleaner and more pleasant texture in the final dish.

Now, let’s prepare the seasoning for the Gochujang Anchovy Stir-fry. In the same pan, combine the Gochujang, cooking wine, plum extract, minced garlic, and sugar. Mix them well. (Tip: We’ll add the corn syrup, sesame oil, and sesame seeds later to preserve their aroma and flavor.)

In a pan, add a little cooking oil, then add the prepared anchovies, mixed nuts, dried cranberries, and dried blueberries. Pour in the soy sauce, sugar, corn syrup, and cooking wine. Stir-fry everything together, making sure the anchovies don’t burn. If you prefer a sweeter taste, you can add a little more sugar. Continue stirring until all the ingredients are well combined and coated. This creates a wonderfully crispy and savory Nutty Anchovy Stir-fry!
