Dad’s Super Easy Scallion Rolls: A Quick and Healthy Dish
I’m excited to share a recipe my father taught me. This dish is incredibly simple to make, visually appealing, and uses healthy ingredients. It’s perfect for a light meal, a side dish, or even for hosting guests. Try this easy and delicious recipe!
Ingredients- 5 imitation crab sticks
- 1 cucumber
- 1 bell pepper (any color)
- 1 bunch scallions
- 1/2 carrot
Cooking Instructions
Step 1
First, prepare the scallions by trimming the roots and cutting them into manageable pieces, about 10cm long. Since you’ll be rolling other ingredients inside, try to cut them into a length that’s easy to work with. Keep in mind that they will shrink slightly when blanched, so aim for a moderate thickness. If you get comfortable, you can even combine multiple vegetables inside each roll.
Step 2
Blanch the prepared scallions in boiling water with a pinch of salt for just 30-40 seconds. Be careful not to overcook them, as they can become too soft. Immediately after blanching, rinse them under cold water to stop the cooking process and preserve their crisp texture.
Step 3
For the bell pepper, remove the stem and seeds, then julienne it into thin strips, about 0.5 cm thick. Using different colored bell peppers will make your rolls more vibrant and attractive. Julienne the carrot to a similar thickness.
Step 4
Cut the imitation crab sticks into smaller pieces, either lengthwise into 2-3 strips or julienned, so they fit easily within the scallion rolls. Ensuring all your filling ingredients are cut to a similar size makes rolling much easier.
Step 5
Slice the cucumber into pieces about 0.5 cm thick, either into half-moons or sticks, for easy eating. The key is to have all your filling ingredients cut to a size that complements the scallion. Now, lay a blanched scallion flat on your work surface. Arrange the prepared filling ingredients (bell pepper, carrot, imitation crab, cucumber) neatly on top and carefully roll it up tightly. Press gently to ensure the roll holds its shape.
Step 6
Don’t worry if some of the rolls aren’t perfectly straight! The most important part is to fill them with the ingredients and roll them up with care. Making them look appealing enhances the dining experience.
Step 7
Continue this process, filling and rolling the remaining scallions with the rest of the ingredients until everything is used up. Gently press the completed rolls to help them maintain their shape and prevent them from unraveling. Keep rolling until all ingredients are incorporated.
