Braised Pork Shank (Dongpo Pork Style) Made with Leftover Boiled Pork
Turn Leftover Boiled Pork into a Delicious ‘Faux’ Dongpo Pork
I often use pork shank because it’s lean. I made boiled pork with pork shank and enjoyed it, but I had a bit left over. Since reheating it doesn’t taste as good, I wondered what to do with it and decided to try making a ‘faux’ Dongpo pork. And guess what? It tasted amazing! Next time, I’ll intentionally save some boiled pork to make this recipe. The chewy pork shank combined with the sweet and savory sauce is a real appetite booster.
Main Ingredients- 250g Boiled Pork Shank
- 5 heads Baby Bok Choy
- 5 cloves Garlic
Braising Sauce- 1 Tbsp Dark Soy Sauce (Muk Ganjang)
- 1.5 Tbsp Oyster Sauce
- 1 Tbsp Plum Extract
- 1 Tbsp Ginger Paste
- 1 Tbsp Mirin or Cooking Wine
- 50ml Water

Cooking Instructions
Step 1
Wash the baby bok choy thoroughly. Blanch them in boiling water with a pinch of salt until they turn bright green. Be careful not to overcook, or they will become mushy. Immediately plunge the blanched bok choy into cold water to cool them down, then drain any excess water.
Step 2
Arrange the drained baby bok choy around the serving plate, either whole or cut into bite-sized pieces. These will serve as a vibrant garnish.
Step 3
Now, let’s make the braising sauce, Dongpo pork style. In a bowl, combine 1 Tbsp dark soy sauce, 1.5 Tbsp oyster sauce, 1 Tbsp plum extract, 1 Tbsp ginger paste, 1 Tbsp mirin or cooking wine, and 50ml of water. Mix well. Thinly slice the 5 cloves of garlic and add them to the sauce.
Step 4
Pour the prepared sauce into a pot. Bring it to a simmer over medium heat, then reduce the heat to low and let it bubble gently. The sauce will slightly thicken and develop its flavors.
Step 5
Once the sauce is simmering, add the prepared boiled pork shank. Ladle the braising sauce over the pork repeatedly using a spoon as it cooks. This ensures the pork absorbs the flavors evenly and stays moist. Braise for about 5-7 minutes.
Step 6
When the braising sauce has reduced to a glaze and the pork shank looks glossy, turn off the heat and finish. Slice the pork shank and serve it over the warmed baby bok choy for a delicious Dongpo pork-style braised dish!
