Introducing an Andong Jjimdak recipe that uses leftover cola to achieve a rich color and flavor, just like you’d find in restaurants. It’s a savory, sweet, and slightly spicy dish that the whole family can enjoy. Even without complex ingredients, try making this special dish for special occasions or a delightful meal!
Main Ingredients- 1 whole chicken (cleaned)
- 1 medium carrot
- 2 medium potatoes
- 1/2 shiitake mushroom
- 1/2 large onion
- 2 Cheongyang peppers (Korean chili peppers)
- Green onion (optional)
Special Andong Jjimdak Sauce- 200g soy sauce (approx. 1.5 cups by standard Korean paper cup)
- 50g soju or cooking wine (3 Tbsp)
- 1 Tbsp minced garlic
- 200g water (1 cup by standard Korean paper cup)
- 2.5 Tbsp sugar
- 1 knob of ginger (thumb-sized)
- 200g soy sauce (approx. 1.5 cups by standard Korean paper cup)
- 50g soju or cooking wine (3 Tbsp)
- 1 Tbsp minced garlic
- 200g water (1 cup by standard Korean paper cup)
- 2.5 Tbsp sugar
- 1 knob of ginger (thumb-sized)
Cooking Instructions
Step 1
200g of soy sauce is approximately 1.5 cups when measured using a standard Korean paper cup. Please keep this in mind if using a measuring cup.
Step 2
First, clean the chicken thoroughly. Then, bring water to a boil with 3 tablespoons of soju (or cooking wine) added. Blanch the chicken for 1-2 minutes to remove impurities and any gamey smell, ensuring a cleaner taste. Rinse the blanched chicken under cold water and set aside.
Step 3
In a pot, combine the prepared chicken, water, and all the special sauce ingredients (soy sauce, soju/cooking wine, minced garlic, sugar, ginger). Bring to a boil over high heat. Once the sauce starts boiling, reduce the heat to medium-low, cover the pot, and simmer for about 15 minutes to cook the chicken.
Step 4
Once the chicken is partially cooked, add the potatoes and carrots, which take longer to cook. Continue to simmer over medium-low heat with the lid on for another 15 minutes until the vegetables are tender. When the potatoes and carrots are soft, add the onion and Cheongyang peppers (and green onion, if using). Cook until the sauce has reduced slightly and the ingredients have a glossy sheen, then turn off the heat. Adding cola will give it a delicious color without artificial coloring.
