Flavorful Tomato Curry with a Refreshing Twist

While no-water tomato curry recipes are popular, this one is made using those slightly leftover tomatoes in your fridge. It has a wonderfully refreshing tang from the tomatoes at the end of each bite. Curries are often made in large batches to last for several meals, right? I made a big pot myself and enjoyed curry for every meal all day! Haha, but this tomato curry never gets boring!

Curry Ingredients

  • 6 blocks of solid curry roux (120g)
  • 300g pork
  • 2 onions (approx. 350g)
  • 3 potatoes (approx. 300g)
  • 1/3 carrot (approx. 180g)
  • 3 ripe tomatoes (approx. 300g)
  • 700ml water

Cooking Instructions

Prepare all your ingredients fresh.

Peel the tomatoes cleanly. Before adding tomatoes to boiling water, make shallow cross-shaped slits on the skin. Then, immerse them in warm or boiling water for about 1-2 minutes. The skin should peel off easily. If the skin starts to lift, gently peel it off with your hands. Tip: Be careful not to cut too deeply into the skin, as this can cause the tomato flesh to break apart.

Chop the peeled tomatoes, along with the onions, potatoes, and carrots, into large, bite-sized pieces. Cutting the vegetables to a similar size will help them cook evenly.

Heat a little oil in a large pot. Add all the prepared vegetables (onions, potatoes, carrots, tomatoes), excluding the pork, and stir-fry over medium heat. It’s important to sauté until the vegetables release a subtle sweetness.

Once the onions start to turn translucent, add the pork and continue to stir-fry. Cook until the outside of the pork turns white. Tip: If you want to eliminate any potential pork odor, you can add 2 tablespoons of ginger wine (or cooking wine) at this stage for added flavor. (Optional)

When the pork is partially cooked, pour in the 700ml of water you prepared. While adding the water, gently scrape the bottom of the pot to incorporate any browned bits.

Cover the pot and bring it to a boil over slightly higher heat. Let it simmer for a bit to allow the ingredients to meld together.

Once the mixture is bubbling, reduce the heat to medium-low. Add the curry blocks and stir well to prevent clumping. Continue to simmer gently until the potatoes are fully cooked. Tip: Simmering on low heat prevents the curry from sticking and burning, allowing it to develop a deeper flavor. Cook until a fork inserted into the potatoes goes through smoothly.

Simply simmer until cooked, and your refreshing and flavorful tomato curry is ready! Serve generously over warm rice and enjoy.
