  • 1/3 Carrot
  • 4 Shiitake mushrooms
  • 1 King oyster mushroom
  • 5 Stems of spinach
  • 2 Scallions

Seasoning & Stir-fry Ingredients

  • 5 Tbsp Soy sauce
  • 3 Tbsp Sesame oil
  • 3 Tbsp Sugar
  • 1 Tbsp Toasted sesame seeds
  • Pinch of black pepper
  • 2 Tbsp Cooking oil

Cooking Instructions

Step 1

First, prepare the glass noodles. Soak them in cold water for about 20 minutes until softened. This step ensures the noodles will be tender and chewy after cooking.

Let’s prepare the vegetables and mushrooms. Julienne the carrot, king oyster mushroom, and onion into similar lengths. Remove the stems from the shiitake mushrooms and slice them thinly. Blanch the spinach in boiling water with a pinch of salt, then rinse in cold water and squeeze out excess moisture. Cut the scallions into similar lengths as well.

Now, let’s start stir-frying! Heat 2 tablespoons of cooking oil in a pan over medium-low heat. Add the julienned onion and stir-fry until translucent. Sautéing the onions thoroughly will bring out their natural sweetness.

Once the onions are translucent, add the sliced king oyster mushrooms and stir-fry them together. Continue to cook until the mushrooms soften and start to turn golden.

As the mushrooms release their moisture, add the thinly sliced shiitake mushrooms and continue stir-frying. You’ll know it’s ready when you can smell their distinct aroma.

Turn off the heat and add the prepared scallions. Gently toss them with the other ingredients using residual heat. Scallions cook quickly, so adding them at the end prevents them from becoming mushy.

Now it’s time to cook the glass noodles. Bring a large pot of water to a boil. Once boiling, add 1 tablespoon of cooking oil and 1 tablespoon of soy sauce, then add the soaked glass noodles. Cook for about 4 minutes, then immediately drain and rinse under cold water. Be careful not to overcook, as they can become mushy. In a separate pot or bowl, place the cooked noodles and mix in 5 tablespoons of soy sauce, 3 tablespoons of sugar, and 3 tablespoons of sesame oil. Gently toss the noodles to ensure they are evenly coated with the seasoning. This method allows the sauce to penetrate the noodles for a richer flavor.
