Baby Janchi Guksu (Korean Banquet Noodles)
Baby’s First Noodles! A Soft and Delicious Recipe for Baby Janchi Guksu
Introducing your baby to noodles with this gentle and flavorful Janchi Guksu, made with easily digestible rice noodles, fresh vegetables, and nutritious egg yolk. It’s perfect for babies who have progressed beyond purees and are starting to explore chewing.
Key Ingredients- 1 serving of rice noodles (baby-friendly type)
- 10g zucchini
- 10g carrot
- 10g mushroom (shiitake or oyster mushrooms recommended)
- 1 egg yolk
- Sufficient amount of broth (anchovy-daikon or rice water is good; plain water is also an option)
Cooking Instructions
Step 1
First, thinly julienne all the vegetables so they are easy for your baby to eat. It’s crucial to make them as soft as possible for your baby to chew and swallow comfortably. Slice the mushrooms thinly as well to achieve a tender texture.
Step 2
Bring the prepared broth (or rice water) to a boil in a pot. Once boiling, add the thinly sliced zucchini, carrots, and mushrooms. Cook gently for about 5 minutes until the vegetables are tender and easy for your baby to chew.
Step 3
Cook the rice noodles in boiling water, similar to how you would cook regular wheat noodles. Rice noodles cook quickly, so stir them to prevent sticking. Cook until the water boils twice, then rinse them thoroughly under cold water. This removes any starchy taste and gives the noodles a firm texture. You can also cut the noodles into bite-sized pieces with scissors for easier eating.
Step 4
Now, add the cooked rice noodles to the broth and simmer briefly to warm them through. Reduce the heat to low, then gently whisk in the egg yolk. Stir continuously as the yolk cooks, creating a soft, creamy topping. (It’s recommended to use only the yolk initially, as egg whites can sometimes cause allergic reactions.)
Step 5
Finally, assemble your baby’s Janchi Guksu in their special bowl: place the warm noodles, the soft egg yolk topping, and the cooked vegetables. Let it cool to a safe temperature for your baby and serve! Enjoy this delightful meal.
