Main Ingredients- 10 fresh eggs
- 1 stalk of green onion (scallion)
- 1/2 onion
- 1 green chili pepper
- 1 red chili pepper
For Boiling the Eggs- 1 Tbsp vinegar (helps prevent eggs from cracking and makes peeling easier)
- 1/4 tsp salt (adds depth and removes any eggy odor)
Marinade- 1 Tbsp minced garlic
- 12 Tbsp soy sauce (using regular soy sauce gives a pleasant color)
- 1 Tbsp cooking wine (like Mirin, helps remove gaminess and adds flavor)
- 2 Tbsp sugar (adjust to your sweetness preference)
- 2 Tbsp corn syrup or oligosaccharide syrup (for gloss and smooth texture)
- A pinch of black pepper
- 1 Tbsp toasted sesame seeds (for nutty aroma)
- 200ml water (to achieve the right marinade consistency)

Cooking Instructions
Step 1
To start making your delicious soy-marinated eggs, take the eggs out of the refrigerator about an hour before you plan to boil them. Allowing them to come to room temperature helps prevent them from cracking during the boiling process.
Step 2
Fill a pot with enough water to generously cover the eggs. Bring the water to a rolling boil over medium-high heat. Once boiling, reduce the heat to medium-low, carefully add 1 tablespoon of vinegar and 1/4 teaspoon of salt to the water. Gently lower the eggs into the simmering water, being careful not to let them bump into each other. Boil for exactly 7 minutes to achieve a perfect soft-boiled yolk.
Step 3
Immediately after boiling for 7 minutes, transfer the eggs to a bowl of ice-cold water. This rapid cooling stops the cooking process and makes peeling the shells much easier. Once cooled, carefully peel the eggs, ensuring the whites remain intact.
Step 4
Prepare the aromatic vegetables that will infuse flavor into the marinade. Finely mince 1/2 an onion and 1 stalk of green onion. For the chili peppers, cut them in half lengthwise, remove the seeds, and then finely chop them. This will add a nice spicy kick and color to your Gyeran Jang.

Now, let’s create the flavorful marinade. In a wide container or a resealable jar, combine the minced onion, green onion, and chili peppers. Add the marinade ingredients: 1 tablespoon minced garlic, 12 tablespoons soy sauce, 1 tablespoon cooking wine, 2 tablespoons sugar, 2 tablespoons corn syrup, a pinch of black pepper, 1 tablespoon toasted sesame seeds, and 200ml of water. Stir everything together thoroughly until well combined. You can adjust the soy sauce amount to your taste.
Step 6
Finally, place the peeled soft-boiled eggs into the container with the marinade. Ensure the marinade generously covers the eggs. Use a spoon to ladle some of the marinade and chopped vegetables over the top of the eggs, making sure they are well coated. Your delicious soft-boiled soy-marinated eggs are ready! For the best flavor, let them marinate in the refrigerator for at least one day before serving.
