A satisfying recipe for fried potatoes, perfect as a side dish! We’ve added ham, a favorite among kids, to make it even richer and more flavorful. It’s a simple yet delicious meal or lunchbox addition!
Main Ingredients- 1 medium potato
- 100g ham (Spam or your favorite brand)
- 30g carrot
- 40g onion
- 20g green onion
Seasoning- 4 pinches of salt (approx. 1/4 tsp)
- A pinch of black pepper
- 0.5 Tbsp minced garlic
- 4 Tbsp cooking oil or olive oil

Cooking Instructions
Step 1
First, wash and peel the potato. Then, cut it into strips about 0.5cm thick. Slice the ham into similar-sized pieces (about 0.5cm thick). Julienne the carrot and onion, and finely chop the green onion. Having all your ingredients prepped and ready makes the cooking process much smoother.
Step 2
Fill a deep pot with plenty of water and add 2 pinches of salt. Once the water is boiling vigorously, add the julienned potatoes. Boil them just until they are about 80% cooked. Be careful not to overcook them, as they can become mushy when stir-fried (boil for about 3-4 minutes).
Step 3
Drain the boiled potatoes in a colander. Do not rinse them with cold water; drain them while they are still hot to maintain a slightly chewy texture when stir-fried.
Step 4
Place the sliced ham in warm water and blanch for about 1 minute. This step helps to remove preservatives or excess salt often found in ham, making its flavor milder and more pleasant. We always do this at home when using ham.
Step 5
Drain the blanched ham in a colander, then gently pat it dry with a paper towel. Have it ready for cooking.
Step 6
Heat 4 tablespoons of oil in a pan over medium heat. Add the chopped green onion and minced garlic. Stir-fry until fragrant. Keep the heat low to medium-low to prevent burning, allowing the flavors of the garlic and green onion to infuse into the oil.
Step 7
Once the garlic starts to turn a light golden brown, add the julienned onion and carrot. Increase the heat to high and stir-fry quickly until the vegetables become slightly translucent. Stir-frying over high heat helps retain the crispness of the vegetables.
Step 8
Now, add the parboiled potatoes and the drained ham to the pan. Stir-fry everything together over high heat until well combined. Season with 2 pinches of salt and a pinch of black pepper to taste. Since the potatoes are already partially cooked, you only need to stir-fry for another 2-3 minutes until all ingredients are well mixed. Avoid overcooking to prevent the potatoes from breaking apart.
Step 9
Transfer the delicious fried potatoes and ham to a serving plate. Enjoy your meal! It’s best served warm. This dish makes a hearty side dish or a satisfying snack for kids. Enjoy your cooking!
