Main Ingredients- 2 handfuls garlic scapes (approx. 200g)
- 1 handful dried shrimp (approx. 50g)
Seasoning Ingredients- 4 Tbsp soy sauce
- 2 Tbsp cooking wine (mirin)
- 1 Tbsp corn syrup or rice syrup
- 1 Tbsp sesame oil
- A pinch of sesame seeds
- 4 Tbsp soy sauce

Cooking Instructions
Step 1
First, wash the garlic scapes thoroughly and cut them into bite-sized pieces. For a standard side dish, pieces about two to three finger-lengths long (about 4-5 cm) are suitable. Be mindful not to cut them too short, as they might break apart during stir-frying.
Step 2
In a bowl, combine 4 Tbsp soy sauce, 2 Tbsp cooking wine, and 1 Tbsp corn syrup (or rice syrup). Mix well to create the seasoning sauce in advance. Preparing the sauce beforehand can make the cooking process smoother.
Step 3
Heat 1 Tbsp of cooking oil (canola oil recommended) in a pan over medium heat. Add the prepared garlic scapes and begin to stir-fry. Cook for about 2-3 minutes until the garlic scapes slightly wilt and turn a light green color. Stir-frying them once like this will enhance their texture.
Step 4
Once the garlic scapes are somewhat stir-fried, pour in all the prepared seasoning sauce. Reduce the heat to low and let it simmer slowly. The key at this stage is heat control. Simmering gently over low heat will soften the pungent flavor of the garlic scapes and allow the sauce to penetrate evenly, developing a deep flavor. Continue to simmer for about 5-7 minutes, or until the garlic scapes are fully wilted and the sauce has thickened.
Step 5
When the garlic scapes have wilted and the sauce has nearly reduced, add the dried shrimp. The dried shrimp doesn’t need to be stir-fried separately. The ideal time to add dried shrimp is when the sauce is almost finished; adding them at this point ensures they don’t become too hard and retain a pleasant chewiness and nutty flavor. After adding the dried shrimp, quickly stir-fry them with the sauce for another 1-2 minutes.
Step 6
Finally, drizzle in 1 Tbsp of sesame oil and sprinkle with sesame seeds to finish. The fragrant sesame oil and seeds will further enhance the flavor. Mix well and enjoy! It’s incredibly delicious served over warm rice. ♥
