It’s been a while since I baked! Today, I made Cheesy Corn Scones, and the popping corn kernels combined with cheese were absolutely delightful! They were so delicious that I couldn’t stop reaching for more. Let’s make these irresistible Cheesy Corn Scones!
Scone Dough- 140g cake flour
- 1 egg
- 1/2 Tbsp baking powder
- 70g sugar
- 5 Tbsp milk
- 150g cold butter, cubed
Cheesy Corn Filling- 340g canned corn, drained
- 5 Tbsp mayonnaise
- 2 pinches salt
- 1 Tbsp sugar
- 2 Tbsp corn syrup (oligo당)
- Pinch of black pepper
- 2 bags (approx. 160g) shredded pizza cheese

Cooking Instructions
Step 1
In a bowl, whisk together 140g cake flour, 70g sugar, and 1/2 Tbsp baking powder. Mixing the dry ingredients first ensures a more uniform dough.
Step 2
In a separate bowl, lightly beat 1 egg. Add 5 Tbsp milk and 150g of cold butter, cut into cubes. Combine these with the dry ingredients to start forming the dough. Using cold butter is key to achieving the scone’s signature flaky texture.
Step 3
Using a spatula or your hands, gently mix until just combined and a rough dough forms. Be careful not to overmix, as this can develop gluten and make the scones tough. Wrap the dough in plastic wrap and refrigerate for 30 minutes to 1 hour. This chilling step allows the butter to firm up again and the gluten to relax, leading to a better scone.
Step 4
Now, let’s prepare the cheesy corn filling. Drain the canned corn thoroughly using a sieve. Removing excess moisture is crucial to prevent the dough from becoming soggy. Add 1 Tbsp sugar to the drained corn.

Next, add 2 Tbsp of corn syrup (oligo당) for added sweetness and a glossy finish.

Finally, mix in 5 Tbsp mayonnaise, 2 pinches of salt, and a pinch of black pepper. Stir everything together until well combined. You’ll have a delicious and savory cheesy corn filling!

Once the dough has chilled, remove it from the refrigerator. Divide the dough among muffin cups or paper liners. Press the dough evenly onto the bottom and up the sides of each cup to create a mold for the filling. Preparing your molds beforehand will make this step easier.

Generously spoon the prepared cheesy corn filling into each dough-lined cup. Don’t be shy with the filling; more filling means a more satisfying bite!

For the grand finale, sprinkle about 2 bags of shredded pizza cheese evenly over the corn filling in each cup. The melting cheese will create a wonderfully gooey and appealing topping.
