Spicy and Savory Red Bean Sprout Salad Recipe for Everyday Meals
My eldest child requested their favorite spicy and savory red bean sprout salad after a long time. With its crisp texture and delightful umami, this Kongnamul Muchim will revive your appetite and make a perfect side dish for any meal, or even a light snack!
Main Ingredients- Bean Sprouts 300g (Choose fresh and plump ones)
- Green Onion 1/2 stalk (Finely chopped)
Cooking Instructions
Step 1
Wash 300g of fresh bean sprouts thoroughly under running water. Bring a pot of water to a rolling boil, then add the washed bean sprouts. Boil for 3-4 minutes. It’s important to cook them until they are still crisp and not mushy.
Step 2
While the bean sprouts are boiling, finely chop 1/2 green onion. Chopping it finely helps the seasoning distribute evenly and makes the dish more visually appealing.
Step 3
Once the bean sprouts are cooked, drain them in a colander and quickly rinse under cold water to cool them down. This helps maintain their crisp texture. Drain them well and transfer to a large bowl.
Step 4
Sprinkle 1.5 Tbsp of gochugaru evenly over the bean sprouts. If you prefer it spicier, you can increase the amount or add a little Cheongyang chili flakes.
Step 5
Add 1 Tbsp of soup soy sauce and 1 Tbsp of anchovy extract for a rich, savory flavor. Finally, add 1/3 Tbsp of salt to season. (You might find the flavor sufficient with just the soy sauce and fish sauce, so taste and adjust the salt accordingly).
Step 6
Drizzle 1 Tbsp of sesame oil for a nutty aroma. Adding sesame oil at the end preserves its fragrance and enhances the taste.
Step 7
Lastly, add a generous amount of hand-crushed sesame seeds. After adding all the seasoning ingredients, gently mix everything with your hands, being careful not to mash the bean sprouts. Toss until the seasoning is evenly distributed.
